    Ingredients:
    3 chicken breasts
    1/2 tsp salt
    1/2 tsp pepper
    1/2 tsp garlic powder
    200 g ham
    120 g Emmental cheese
    80 g flour
    80 g panko
    3 eggs
    For the sauce:
    30 g butter
    1 garlic clove
    2 tbsp AP flour
    300 ml milk
    40 g Dijon mustard
    30 g Parmesan
    Salt and pepper
    Parsley
    Instructions:
    Butterfly the chicken breast. Underneath and on top of it, place baking paper or kitchen foil and, with light blows with the flat side of a hammer, thin the breast evenly. Be careful not to tear the meat. Season with salt, pepper and garlic powder. Place ham on the entire surface of the thinned breast. At one end put the Emmental and from there roll the breast into a roll with light pressure. Transfer the roll to kitchen foil and roll it up tight, holding both ends of the foil and twisting them. It should be like a thick salami. Tie the two ends of the foil together to prevent it from unraveling. Place the breast in the freezer for a minimum of 1 hour. Repeat the steps with the remaining chicken breasts. In separate plates, put the flour, panko and the 3 eggs that you beat with a wire. Unwrap the foil from the chicken breast and put it in flour first. Roll well so that the flour sticks everywhere. Repeat the step in the eggs. Do the same in the panko. Heat oil for frying in a pan to 160C/320F. If you don't have a thermometer, drop in a crumb of the panko. If bubbles start coming out, it means the temperature has been reached. At the same time, preheat the oven to 180C360F. Carefully place the first roll in the oil, rolled end down, to seal well. Frying lasts a few minutes - until golden. Carefully turn the roll in the fat to fry evenly. When ready, put it on a dish with kitchen paper. Place the three rolls - Cordon Bleu on a baking tray lined with baking paper. Place the tray in the preheated oven for 10 minutes.
    Melt the butter in a saucepan. Add the pressed garlic. Stir briefly and add 2 tbsp flour. Mix well to make a thick paste. Add the milk and mix the sauce well. After a few minutes, add the mustard, grated Parmesan, salt and pepper. Stir, you should get a thick sauce. After removing the roll, let them rest for 5 minutes. Cut them into slices. Place them on a plate and pour the mustard sauce over them. Sprinkle chopped fresh parsley on top.
