    Hi, please correct me if I'm wrong but I don't see dissolution at all, all I see is hydration. I came here trying to make mashed potatoes. Thank you for this excellent video.

      Yes, the hydration is bloating up the starch granulats, and the water inside detatch the long polymors of glucose from each other and make a coat of water around them. this makes the granuletes break up into smaller picses
