Hey, I've seen you on the ascent forums. We have a 2023 Ascent Limited and are converting to an overlander as well. However we are family of 6 and I don't expect to fit us all inside the Ascent for sleeping. For sleeping we are very likely to end up with a batwing/270degree awning that converts into a tent. We might add a small rooftop tent to accommodate a couple of the kids, but are getting the awning first to see how that works out.
So far we've done wheels, tires, and skid plates. We will have our Prinsu rack installed by the end of this month (July) and are still figuring out the best way to add a 2" lift, although we expect to have that installed by end of July or early/mid August.
I really really want to find a solution for removing the front bumper and adding better approach angle, that will be a fun one to figure out. We have no plans for an electric fridge, but instead are looking at ideas for mounting a swing-out hitch that will carry our cooler and a stove top. Basically a swing-out kitchen on the hitch.
Anyway, love your project and I'm looking forward to following along with your progress.
What storage solutions are you considering for on top of the Prinsu rack?

Nice project! I am about to get a 2021 Limited tomorrow. I am looking into lifting it 2” as well and change the 20” wheels to 18” wheels. I own a teardrop trailer business and own a model that pairs well will a moderately lifted car with at tires. Did you go from 20” wheels to the 18 wheels? I don’t need the rear seats and would really like to take them out for all my camping gear. They don’t take up a lot of space but there’s a few cubic feet I could build storage into. Have you ever heard of anyone removing them? I am going from a lifted Lexus GX470 and want the same capability but newer ride.
Hey Kevin! Hope you're loving the Ascent (if you ended up buying it!) My 2021 Premium actually had 18" OEM wheels to begin with, but I swapped them out for stronger ones. I have seen a few folks on the Subaru Ascent Forum remove the 3rd row!
