  • You can prepare light healthy vegetarian menus for your Ramadan table or for your daily family and guests. In this series, I want to show you vegetarian soups, main meals, and salad varieties together. I hope you like it!
    In the video i show the recipes in quick succession. Below are the detailed ingredients and separate video links for each recipe:
    LEEK POTATO SOUP:

    Ingredients:
    2 tablespoons of olive oil
    5 potatoes (medium)
    2 leeks
    1/4 celery
    2-3 cloves of garlic
    1.7 - 2 liters of water / broth
    salt, pepper
    2 pinches of nutmeg powder
    150 - 200 ml cream
    BAKED EGGPLANT WITH MUSHROOMS:

    Ingredients:
    3-4 eggplants
    7-8 mushrooms
    1 large onion
    2 capsicum peppers
    2 green peppers
    2-3 ripe tomatoes
    3 cloves of garlic
    100 g feta cheese
    6 tablespoons olive oil
    salt
    2 teaspoons of thyme
    1 dessert k. agave or honey
    TURKISH RICE PILAF:

    Ingredients:
    2 cups of baldo rice (400 g)
    1/2 cup of barley vermicelli (100 g)
    3 glasses of water or chicken stock (600 ml)
    2 full meals k. butter (50 g)
    2 tbsp olive oil
    1 teaspoon of salt
    RAW SPINACH SALAD:

    Ingredients:
    4-5 handfuls of spinach leaves
    2 carrots
    2-3 spring onions
    1 pomegranate
    2 tablespoons of olive oil
    1/2 lime or 1 Tbs lemon juice
    2 tbsp pomegranate syrup
    (1-2 tbsp pomegranate juice - optional)
    salt
