    I am Thai and I am glad to watch this cooking content about Thai dish like this. Your cooking looks almost similar to how we cook "Pad See Ew" in Thailand.
    Actually, you can use various kinds of meat as you want such as sliced pork, chicken, shrimps or squids to cook this dish and also use mushroom or tofu for vegetarian. And you can use thin rice noodle or rice vermicelli to cook this dish as well. That tastes so yummy, too. (By the way, no need to put the spring onions in the end this dish is still great.)
    I really love how you eat this dish with chilli vinegar. If you like it to be more hot and spicy adding some pinch of Thai chilli powder is a good choice. 👍 Enjoy your Thai food!

      it looks just like the ones i had back when i was still living in thailand. makes me miss home TT^TT especially after having a call with my aunt and cousin asking when i will be back again TT^TT. but if i tell them what i wanna eat that means they ill get me it for one whole week or till i get sick of the stuff i wanna eat 555+

    I just had to come back and say this is AMAZING! I tried it last night and I think it's my new favorite stir fry dish, and I do a lot of them. It did require a trip to the Asian market for several sauces that I didn't have, but very well worth the trouble. I think that Golden Mountain sauce just may be a new favorite Asian condiment, too, although it has a lot of competition from Lao Gan Ma Chilli Crisp. Many many thanks for the recipe!

    Bro , I'm Thai chef in Brisbane and I want to tell you please don't boil the nooddle in very hot water . So please use a normal water and wait it for half an hour until the noodle is softer then its gonna be a best nooddle with Pad See Ew and Pad Thai as well.

    I can NEVER get the noodles cooked quite right, but I don’t worry ‘bout it, it still gonna be good! 🤣
    I DID have to double up on the sauce, though, but it came out OK. My wife & son loved it! 👌🏽

    Chinese broccoli is also called "Kai Lan" or "Gai Lan" and can be found in bigger Chinese or mixed Asian groceries. The taste is indeed similar to broccoli, so you can substitute normal broccoli or broccolini. I think tastewise you could substitute all kinds of cabbages including bok choi and kale or other vegetables like green aspargus, snap peas and cauliflower.
    I absolutely love Aarons attitude towards substitution! "Don't worry about it" is such a powerful phrase and enables fun experiments in cooking without damaging the original recipe - thank you, Aaron and Claire for your work ❤️‍🔥🍳

    A good substitute for the black soy is molasses with little extra regular soy sauce.

    Thank you for actually showing what soy sauces you use! It's my biggest peeve with asian recipe videos. Without specifying what brand or origin, the dish will taste vastly different!! Some thai recipes you'd think they use thai soy, thai oyster..etc but they'll be using lee kum kee and we have no idea! So thank you!!!!

    Try adding chopped Thai pickled radish strings with the garlic, really good! Also using jalapeños with the vinegar is a great alternative.

    A good substitute for chinese brocolli is brocollini since it's a cross between normal and chinese brocolli, I would cut the stems in like 2cm pieces and leave the tops whole

    I use Yu Choy or Choy Sum (Cantonese name) instead of Chinese broccoli. It’s like baby Chinese broccoli, sweeter and more tender, but still a sturdy green.
