    I worked at a Thai food truck with a lady that was born and raised in Thailand. Drunken noodle was one of our best sellers. I don't know if it's true, but the backstory she told me was that there was a woman whose husband was always coming home drunk and asking her to make him food. She got upset one time and made this really spicy noodle dish thinking that it would be so spicy that he would never ask her to make drunk food for him again. In a twist of events, the husband ended up loving the dish and then it became popular. Probably just food folklore, but still an entertaining story.

      I heard it ia called drunken noodles because it is so spicy you need to drink multiple drinks when eating it.

      Ha! This is the same origin story/myth of Nashville hot fried chicken! Husband comes home drunk, angry wife makes super spicy food to get back at him, he ends up loving it and a classic, world famous dish is born!

    You should do But Easier, where you make a super complicated dish and an easier version like this. It would be an actually comparable taste test.

    This was great! I made this with the following tweaks: instead of the peppers, I added a heaping cup microwave steamed Broccoli cut small, instead of the rice noodles I used 2 packs of cooked cheap ramen without packets. I added in a leftover sauteed chicken breast, sliced up. For the sauce, I had no fish sauce, I doubled the 2 soys and oyster, added 1tsp ginger paste, 1tsp sambal. Made enough for 3 people! I will definitely be making this often! ❤

    Kee Mao. My favorite thing to mix with an "Evil" curry. It's kinda true that other veg is just tossed in like stir fry. The chow fun noodle and basil with sambal are the only things I find consistent amongst the different Thai restaurants in Hawaii. Your sauce profile and wok action are definitely a must. Nothing better when using tofu than to have that wok char on it from that thicc sauce. Makes the tofu so good. Me likey.
    I hope people make this (in a wok). Kee Mao is the best

    Great recipe as always! I know this will probably get lost in the comments but I just want to thank you. I’ve had a really tough time trying to figure out what is it I want to do. Trying your recipes & it actually turning out good made me realize how much I love being in the kitchen. I feel like I unlocked a new level in my life and it feels exciting. I may be late for the party but at least I’m here now.

    As a Thai guy, even though that it still missing some important ingredients like young pepper corn and fingerroot which can increasing the hotness of your dish (ofcourse, the authentic one supposed to be really HOT and SPICY in order to sober people from hangover), but it's still acceptable due to the availability of ingredient.

    Uncle Joshua. Next time, add a bit more chilli and some fresh young pepper corn. The one here is already awesome but you can still make it better!

    I made this recipe almost exactly, the only difference is I took the garlic and 4 of the red chiles and smashed them in my mortar and pestle. This was AMAZING. The heat was perfect and the sauce was delectable. Now that I have all ingredients needed, I will definitely make this again. Very easy and delicious. Thank you Josh!

    in Indonesia we have something like that with additional toppings of prawn crackers, diced pickled cucumber, and dark soysauce in our country we have a sweeter version so that everything is balanced

    Pad Kee mao story pretty much goes that it's so spicy that you have to be absolutely plastered on order to eat it. I also recommend using a pestel and mortar for the garlic and chilies to make a chili garlic paste so you can really get that flavor

    Pad Kee Mao is one of my favorites. I use ground pork instead of chicken. Thai restaurant down the road throws julienned celery and green beans in theirs which adds an interesting crunch.

    Pounding the garlic and chilli makes a very surprising big difference in taste. Also, this needs to be spiced up a bit with more chilli. Thai holy basil also boost the dish trememdously.

      I agree with you on the pounding pre cooking. Also I prefer to use a mixture of Thai holy basil and sweet basil.

      Are we missing the part where three chilli's were used for a dish that looks like it would serve only two? While it's not going to be flaming hot this looks like it'll be spicy enough already

      @@ItsJustLisa pound the garlic(peeled) and chilli until fairly crushed. This way more essential oil and flavornoid get into the oil much more. Dont make a paste though.

    I use the same ingredients with udon, and occasionally I’ll add a tiny bit of lime juice or a squirt of ketchup to the sauce mix. And maybe prawns instead of chicken sometimes! Amazing!

    You can use just about any noodle in a pinch with this too. I've made this using lo mein noodles and thick spaghetti and both were amazing

    Tteokbokki would be a damn good idea for the channel. I can imagine "Tteokbokki 3 ways"... Traditional, with cream and lardons, and maybe a fancy one ? or one with some sort of green sauce. Some sort of pesto maybe.

    Yes, wide rice noodles ARE shockingly hard to find. I was finally able to buy a package at my regular grocery store a couple weeks ago, but had been searching for months before that, even after checking in a couple of the specialty stores in my city. I just checked again at the store yesterday, and they're all gone.

    I've been trying to be more adventurous with food because textures can be really scary even if they happen in 'safe' foods that I'm familiar with so I ordered tofu drunken noodles from one of the local Thai places and they put the most random things in them, I loved it. The noodles were as wide as lasagna noodles and they put grilled romaine hearts in it. My favorite part, besides the level of spice, was the fried basil.

    It is already delicious as is, but you can throw in some fresh peppercorns and kaffir lime leaves to make it more authentic. (Not necessary, only if you already have them in your pantry.)

    A great dish! Pad Kee Mao is one of my favorites, even over Pad Thai. I'm spoiled since I'm in Thailand, and this only costs around $1.10 US. Same as my other favorite, pineapple fried rice. Oh, and the curries!!!!

    I tried this recipe today but i made it in a slightly different way.
    For the sauce i used 3 coffe spoons of soy sauce, 2 of teriyaki and 1 of mirin.
    Then i added some tosted almonds on top.
    This is by far the best noodle dish i have ever tasted😍😍
