My BigMamma was from Texas she used to add broth made up of Gizzards,Turkey neck plus fresh aromatics thyme, sage leaves and rosemary to the dressing stock and sauté the celery, onion, garlic, and bell pepper. She added ground sage and Poultry Seasoning at the end to taste before adding the eggs. I felt like crying when I saw this video. Plus the cabbage, chicken and mac. She was a cook and would also say you can always add, but can't take out -just like you. She made an okra + shrimp succotash over rice that was delicious! Thanks for reminding me of my Southern roots. Here in California nobody hardly cooks like this. Stores don't even sell salt pork or ham hocks anymore.

This is the most accurate recipe I have seen. Ever! My grandmother taught me this recipe 50 years ago. I used the turkey neck livers and gizzards plus the trinity for the broth. She also put chicken livers in the second cornbread. Everyone always compliments it and there's none left! Thank you Chef.😊

This is how I make my dress. Only I didn’t add veggies into the cornbread mix and I used bacon drippings in the dressing mixture. Got to try the veggie in the corn bread thigh. Thank you for that tip. ❤

I liked how you added the veggies to the batter. To me the dressing would be more flavorful this way than just adding it as you mix the dressing. It looks so good. Well worth a try.

Alright now Valdosta Georgia/Seattle can make good dressing also, we use can of mushroom soup and a pinch of sage, poultry seasoning also.

Why did you make your cornbread with water and not milk/buttermilk?
Maybe milk allergy 🤧
@b2bgood870 I will be interested to see Chef Charles reply. It might be that the milk can make it too much like cake and cause the dressing to be too gummy
Maybe the hot water kind of precooked the corn meal so that the dressing is not so grainy tasting when he takes it out of the oven.
It tastes better with the hit water cornbread trust. He's doing the dang thang. I'm from Georgia, and that's the way we cook our homemade cornbread dressing 💯 % delicious 😋 😍

This is how I make my dress. Only I didn’t add veggies into the cornbread mix and I used bacon drippings in the dressing mixture. Got to try the veggie in the corn bread thigh. Thank you for that tip. ❤

Mr. Charles I’m going to try this recipe soon! I love that you add the veggies to the broth and cook instead of sautéed. Seems easier and like one less step that will still make good dressing.

Wow. You are bringing back so many precious memories. My mom made her cornbread with hot water. You couldn't tell the difference. She even added the hot grease. I liked how you added the veggies to the batter. To me the dressing would be more flavorful this way than just adding it as you mix the dressing. It looks so good. Well worth a try.
