I made a soft and fluffy yogurt cake.
The scent of yogurt and lemon is subtle and it is really delicious.
The ingredients are simple, so it's easy to make. Enjoy it with coffee or tea.
*** Weighing is scale (g), rice spoon (tbsp), teaspoon (tsp) weighing.
[Diameter 15cm, Height 7cm]
✤ Yolk dough
-30g (3tbsp) Cake flour
-10g (1tbsp) Corn starch
-240g Sugar-free yogurt
-1Lemon
-2pinches Salt
-3 Egg yolks (large egg)
✤ Meringue
-3egg Whites (large egg)
-50g (5tbsp) Sugar
-10g (1tbsp) Lemon juice
✤ TIP
-Total weight of 3 eggs is 190g (before breaking)
-Oven temperature: Oven temperature: 140℃ preheat / 140℃ for 30 minutes / 110℃ again for 60 minutes / 10 minutes rest in the oven (may vary depending on the oven specifications)
-After cooling completely, separate the cake mold and paper.
-It's best to eat it the next day after refrigeration.

✤ Tips for not failing!
1. Makes the meringue not hard and soft to 80%
2. Pour the dough into the cake mold and slowly draw a circle out from the center with a skewer.
Then, hit the table to remove air bubbles. (It's a tip that doesn't crack the cake)
3. Still, the cake can crack. But it's okay. As it cools, it sinks.
4. Temperature is the most important. Each oven has different specifications, so the baking temperature is also different.
Bake usually between 60 and 90 minutes. How to check if it's done
If the cake has doubled, it is done.
5. No baking powder is required.(because there's someone in doubt~)
Cakes made with meringues are a little difficult to make beautiful.

✤ 실패하지 않기 위한 팁!
1. 머랭은 단단하지 않게, 80%로 부드럽게 만든다
2.케이크틀에 반죽을 붓고, 꼬치로 가운데 부터 천천히 밖으로 원을 그린다.
그리고 테이블에 내리쳐서 기포를 빼준다. (케이크가 갈라지지 않는 팁이예요)
3. 그래도 케이크가 갈라질 수 있어요. 하지만 괜찮아요. 식으면서 가라앉아요.
4.온도가 제일 중요합니다. 오븐마다 사양이 다르므로 굽는 온도도 달라요.
보통 60분~90분 사이로 굽습니다. 다 익었는지 체크하는 방법은
케이크가 1.5~2배로 부풀었다면 다 익은것입니다.
5.베이킹파우더는 필요하지 않습니다.(의심하시는 분이 계셔서요~^^;)
머랭으로 만드는 케이크가 원래 예쁘게 만들기 조금 어렵습니다.

just made this, turned out so well!!
just a few tips for new bakers trying this (or just tips for everyone in general) :
1. mix well the yogurt, flour and cornstarch together first, then only add the egg yolks. this prevents over-mixing of egg yolks which will cause air bubbles to form, hence cracking the cake.
2. beat the egg whites until foamy, then only add the lemon juice.
3. when mixing the egg white mixture w the yogurt mixture, make sure not to over mix also.
4. during baking, NEVER open the oven door. this will cause a temperature drop, making ur cake to sink and be flat.
5. Make sure to leave the cake in the oven (with the door crack open a bit) to cool for 10-15mins. Same like no.4, this ensures there isnt a big temperature drop.
6. Let it cool to room temp before chilling it in the fridge.

Hi Nat, I have a dumb question here. For the egg yolk mixture, the one lemon used is only for the zest right? No lemon juice is added in the egg yolk mixture, am i right?

This was a great success! A wonderfully healthy cake considering that is has little sugar, no butter and still tastes so rich. And very easy to make even for an absolute beginner like me. Thank you! It didn’t rise as muchas the one in the video but still the texture and taste is perfect. Very smooth. Will try a higher temperature for a short time to begin with, to see if I get even more rise that way in my small oven. But I’ll rather have a less tall cake than a dry one.

I made this recipe today! I carefully followed all the instructions but the top cracked while it was rising in the oven. I let it cool for a while and sliced it. The texture was really fluffy and moist but it honestly tasted like a fluffy sweet omelette. But then I refrigerated it. I took another slice after letting it cool for a few hours and it tasted so much better.
If I make it again I’ll make sure to use full fat yoghurt and will add vanilla extract

1st attempt: Kinda fail...
1) 30-30 min. not enough maybe you should try 45 - 45 min if you have classic cake mold.
2) I used homemade yogurt , it made its taste little bit sour , i like it. its taste looks like cheesecake taste but little bit cakei.
3) I didn't use baking powder but maybe i should have used :/
4) Also i used orange juice instead of lemon juice because of taste home made yogurt already really sour.
...Maybe i should go for 2nd attempt :/

by the way, i cut the recipe down by 1 third so I'd only use 1 egg. Also used an airfryer instead of an oven and it worked fine! (sharing in case there are other airfryer owners here wondering if it works heh - you just pour water into your airfryer basket for the same water bath/steaming effect!)
