  • Why premix muffin batter? For fresh baked muffins any day, without the mess, and just a few at a time.
    My children love muffins. But honestly, I don't feel like mixing up batter everyday or when my kitchen is a mess. Even boxed muffin mix needs mixing... and dishes. Plus you only need to bake as many as you need, 1,2...4. Freezing the batter instead of the baked muffins takes up less room in your freezer and is fresher than microwaving to warm up.
    This prep method will work with any of your favorite muffin recipes, just add 3-5 minutes to the total bake time checking often.
    Chocolate Chip Muffin recipe used in this video:
    2 c flour
    1/2 c sugar
    1 tb baking powder
    1/2 tsp salt
    3/4 c milk
    1/3 c oil
    1 egg at room temperature
    3/4 c chocolate chips (mini are best)
    1. Mix the dry ingredients together in one bowl.
    2. Beat the wet ingredients in another bowl.
    3. Combine the two.
    4. Fold in chocolate chips.
    *When ready to bake from frozen, preheat oven to 400° and bake 18-23 minutes always checking at the earliest time. Cool before eating.
