Holy SMOKES.....This might just be the best Steak I've seen you cook my brother. As for not using oil as a binder I think your steak would have more flavor as the the oil creates a barrier between the seasoning and the protein...well at least that what experts say. I have been raving about the reverse seared ribeye on the smoker for years that little bit a smoke flavor makes the best steaks, and reverse sear is so forgiving.. its always tender and juicy.
It's my go to method for steaks Reltius! Hard to go wrong.

What temp did you smoke it at? And how long?
I smoked at 225f for about an hour and 10 mins.
Perfect medium rare the only way a steak should be
