MEAL PREP:
GLAZED TEMPEH STEAK STRIPS
1 block tempeh: amzn.to/3g1FBGc*
3 tbsp maple syrup: amzn.to/3fHfTqr*
3 tbsp balsamic
2 tbsp tomato puree
1 tbsp miso: amzn.to/2YpPhEJ*
1 tbsp soy sauce
1 tsp liquid smoke: amzn.to/3diplyZ*
1 tbsp oil
2 tsp smoked paprika
1 tsp onion granules
1 tsp garlic granules
1 tsp all spice
Salt & pepper
Boil the tempeh for 10 minutes. Make the marinade by whisking all ingredients together with a splash of water in a bowl until combined. Remove the tempeh and drain, once cool, cut into strips. Dip each strip in the marinade and coat well then place in a container with some of the marinade at the bottom. Refrigerate for a minimum of 1 hr.
1 BLOCK FIRM TOFU: amzn.to/2NeQFUd*
2 tbsp soy sauce
2 tbsp maple syrup
2 tbsp rice vinegar
Cornflour (cornstarch in US!)
STICKY ORANGE TOFU MARINADE:
Zest of 1 small orange
Juice of 1 orange
3 tbsp maple syrup
3 tbsp soy sauce
1 tbsp rice vinegar: amzn.to/2YUc4rc*
2 cloves garlic, minced
1 tbsp oil
1/4 tsp chilli flakes
Salt & pepper
1 tbsp cornflour (cornstarch in US!)
Cube the tofu, then in batches, coat in the soy sauce-maple syrup-rice vinegar mix before tossing in cornflour, ensuring they're well coated. Heat some oil in a wok then fry the coated tofu in two batches. Place the first half on a clean towel to drain while frying the other half. Make the Sticky Orange Marinade by whisking all of the ingredients together in a bowl. Place 1/2 in a container. Place half of the tofu back in the pan, then pour in half of the marinade from the bowl. Coat the tofu in the marinade and fry until it becomes sticky, then repeat for the other half. Store in an airtight container once cool.
SPICY JACKFRUIT & BLACK BEANS
1 tbsp oil
1 onion, sliced
3 cloves garlic, minced
2 tsp smoked paprika
2 tsp chilli powder
1 tsp cumin
1 tsp coriander
2 cans young jackfruit, drained
2 tbsp tomato puree
1 cup veg stock
3 tbsp soy sauce
2 tbsp maple syrup
1 tbsp rice vinegar
2 tsp liquid smoke
1 can black beans, rinsed & drained
Salt & pepper
Juice 1 lime
Heat the oil in a pan, add the onion and garlic. Fry off until soft, then add the smoked paprika, chilli powder, cumin and coriander, and toast them for a minute until fragrant. Slice each piece of jackfruit into thirds then using two forks, pull the pieces apart. Add the shredded jackfruit into the pan with the tomato puree, then stir to coat the jackfruit. Add the soy sauce, maple syrup, rice vinegar and liquid smoke, then stir before then adding in the black beans. Season, cover and leave to cook for 40 minutes. Once done, squeeze in the lime juice, stir and leave to cool before placing in an airtight container.

Finally a meal prep video where it's not like "I prepped the same lunch and the same dinner for 5 days in the following week" but finally some variety. I can't eat the same stuff everyday, so this video is really helpful. Please do another one like this in the future :))

I 100% agree about the tempeh! Makes the biggest difference especially for those very sensitive to bitterness!
And I must say, looking at how delicious it looked, I feel like this will be the recipe I will be trying out first, even though the tofu must have been fantastic as well!

I’m in the US and I haven’t seen jarred tempeh like that before. All of ours seems to be packaged in plastic like a block of tofu. Thanks for the great ideas everything looks delicious

i have never seen boiled tempeh before but it always dries out when i bake so i will definitely try it! all of these meals look so delicious :)
I find boiling it beforehand gives it more moisture as well as marinating it, and then just be careful not to over-bake it :-) Thanks so much for watching! X

Ah you can! It's SO easy to be vegan - there are some great alternatives out there now, you can even make your own almond or oat milk, and things like rice, potatoes, pasta, bread, fruits, vegetables, beans, chickpeas, lentils. etc are the cheapest options in most supermarkets, more so than meat, and you can make anything with those! Animals shouldn't have to suffer in order for us to eat :-) X

When I first tried cooking with tempeh at home I really didn't enjoy it, but I've experimented and found it's all about boiling then marinating it, then baking or frying it. It makes SUCH a difference and you can come up with so many marinades for different types of dishes too ;-) X
