Homemade Limoncello - Italian lemon liqueur recipe

  • Limoncello, so easy to make - result ensured for this typical Italian liqueur recipe.
    You just need good lemons and pure alcool. Forget about the commercial Limoncello you find in the stores, you will make it 10 times better! Trust me!
    Ingredients for 1.25 lt (0.33 gl) of Limoncello
    0.5 lt (0,13 gl) of pure Alcool
    0.75 lt (0,20 gl) of water
    250 gr (8.81 oz) of sugar
    5 lemons bio
    ----
    RECIPE:
    Peal 5 lemons. Put the peals in a big jar and pour in it half liter of pure alcool (95°).
    Let the peals rest in the alcool for 10 days (shake every 2/3 days).
    Past 10 days, warm 0.75 lt of water and melt 250 gr of sugar in it. Let this sirup cool down.
    Once the sirup is cold, pour in it the alcool (that now turned yellow) with the lemon peals.
    Give a good mix and the limoncello is ready to go into a bottle. Use a strainer for this last step to avoid any peals into the Limoncello.

    I used a box grater. It does a good job. My peeler broke and and I got too much pith when using a knife when peeling. Pennsylvania only sold 151 proof Everclear so I drove to Delaware to get 195 proof and was cheaper.

    Ive been to florence and had great limoncello..You are right that here in america the limoncello is crap..I started making my own.My first batch cure for two weeks and it was great..Just started a new batch that will sit a month..just in time for xmas..I really need to find some big organic lemons. The ones I find ate scrubbed and peel with a veggie peeler..Chow chow!!

    Limoncello with other citrus i love as well. Buddha's hand makes a wonderful 'cello, and lime-cello, mandarin-cello, grapefruit-cello, and yuzu-cello are good also

    Just made a batch, but instead of water I juiced the lemons I peeled and used that with some sugar.
    6 lemons
    750ml of 151 everclear
    Juice from the 6 lemons
    1 cup of sugar

    As stated before, I used a box grater and only got the yellow zest/skin of the 5 large organic lemons. I waited about 10 days, but noticed my lemon zest was white, so I knew that process was done. My storage location was not warm as the reason I waited that long. Waiting any longer is a JOKE! Others say wait 45 days. Why? The lemon oil is gone, so seriously why wait?
    Adding the almost clear lemon/alcohol mixture to the clear syrup is so exciting! 👍 Instantly it got yellow cloudy. Wow!
    Look, waiting another 45 days is another joke! I placed my finished product in the freezer after bottling and had it 5 hours later.
    FANTASTIC!
    I think those who say wait 45+45 days are afraid they will drink their friend's Christmas gifts.
    I drank my batch in 3 days. I did allow a friend to have a 1.5 oz sample, but I drank it during the Impeachment Hearings of Trump and now after work.
    Remind people that using 190 proof Everclear does not mean that it is so in high alcohol when the drink is finished. It is recommended to drink from small 4 oz /100 ml cups!

      I make my maceration in 7 days with 190proof alcohol, but here in Brazil was too hot..
      I melt the sugar with sousvide and filtered peels for 1 hour and 55 Celsius..
      If you want to wait more, wait after mixing with a dark and cold place..

    This can be made with milk or cream instead of water but it won't last as long.

    I have a batch sitting right now but another recipe said to put the lemon juice of the 6 lemons in with the alcohol. What should I do now? He also added honey to sweeten which I won’t do

    Awesome! After a while the limoncello becomes less colored. Is there some way to stabilize the pigments without using a colorant?

      Hello Sergio, if i understand well what you say, you see a yellow less intense after a while. That is actually normal cause the lemon peals particles will be slowly separating from the alcohol unless you keep shaking it constantly or alternatively you can filter it before putting it in a bottle...If you see a limoncello standing still for 1 year and being still very intense, it most likely will have colorants in it!
      To be honest I usually finish it all before noticing that effect :)

      Probably not. it doesnt seem like a 1 to 1 ratio so ur limoncello would come out very super sweet

    Valerio, how do you feel about making limoncello using vodka? Pure spirits can be a bit difficult to find. I've made it using vodka and it's been decent, but I haven't had top-quality limoncello to compare it to.

      Make sure you get vodka that is as neutral tasting as it gets. Extraction time should be longer, like month.
      For 0,5 liter of 40abv, it would work our to about 100g sugar and 100g of water.
      This should net you about one bottle of limoncello, that has expected strength of around 30abv.

      In addition to letting it extract for a month, I wouldn't add any water. Strain/filter the peels out of the macerated alcohol, add sugar, shake until sugar is dissolved.

      I would use it in the first year or 2. It will last for much longer than that, but the flavor will start to degrade.

      Hello! It is pure alcohol, is 95% or 98%. I discussed with some other people from US and you can find it depending from the state where you live in. Some tried to do it with Wodka cause is the most alcoholic thing that they can find. Here in Italy and in some states you can find this pure alcohol that is used just for making these types of liqueurs :)

      Yes you can.

      You can but the grain alcohol starts at a higher proof and helps keep it up with all the water and sugar that you put into it.
      Vodka will start at 80 or 90 proof.
      Ever clear or moonshine type alcohols will be above 100proof. Ideally you'd want the strongest your state allows. My state is 190 proof but it's easier to find them around 160 proof or so.
      The water and the sugar is basically lowering the proof of the alcohol so the higher you start, the higher it will be when you finish. The lower you start the lower it will be when you finish.
      You can always add more water to bring it down its much harder to add more alcohol to bring it up again.

    Great recipe. I noticed that in Italy pure grain alcohol is readily available, even in supermarkets. How can you get it outside of Italy? Do they have EU shipping? (In the Netherlands they only sell up to 81%abv, which just doesn't cut it)

    Why don’t you just use a micro planer it just removes the outer lemon peel no white…it is amazing…this recipe looks amazing so very easy and authentic..the item you need the name for is called funnel…..fun…Nel….thanks for sharing chow!

      Easy. 95% Spiritus in any Polish shop (only Polish make it and are masters of it since the 14th century). It doesn't have a taste so it's perfect for all kinds of magical preparations. How have you Brits ever survived without it? Lemons + spiritus = perfect Polish Italian marriage.
