@timewarpdrive77 a fair few people do not like antiperspirant (different than deodorant which just covers odor). Both have chemicals that some people avoid. That guy needed rx strength antiperspirant.

Gordon literally was. Working for Marco Pierre White, back in the day when French chefs actually got away with BEATING cooks! Working 6, 18 hour days a week, jeering at newcomers that couldn't last 4 days. A high energy level is what it takes to make the big time. Arelio, and Pinto are dead weight, so are the sweaty dude, and Brian. Remove them like cancer, when they've gotten to the point that they believe that they are ENTITLED to be there.

Respect to the manager for acknowledging his issues. I couldn't help a slightly malicious giggle when he grinned knowing the food feedback was coming. It still boggles me just how deeply dysfunctional the staff relations are at these places.
This might just be one of the most insane episodes of Kitchen Nightmares history.

The restaurant La Brea- The owner was taken to the too of the mountain to release all of his stress that he has held in dealing with his restaurant, as his employees did not listen to him and did not give his the respect that he deserved being the owner.
He tries to lead by example helping his employees and especially the kitchen with his chef Orelio.
Orelio has gotten used to leaving things undone as the owner goes behind him with cooking, organizing cleaning, prepping; etc.
I have seen this episode many times and my thoughts have expanded regarding Orelio’s behavior.
I think the reason Orelio says he can do whatever he wants and that is why he stays is only partly true. In his mind he has weighed what he does not like, such as the owner micro managing him disturbing his flow to the point that he cannot get a rhythm going in the kitchen, probably due to his being unhappy with the food he has to prepare for the customers. In his mind the food like the unduck, un fish; unchicken; etc, makes no sense. With normal food one would use salt, herbs and spices to bring the flavor
of the meat, fish, and poultry out. But with these fake fish, meat, and poultry the flavoring herbs, salts, and fats are already there to give the product the illusion of being a fish, meat and poultry. Adding more does nothing for product and actually throws off the original herbs that gave the illusion it was meat, fish or poultry in the first place. Orelio had given up on enhancing these products because they cannot be more. They are already enhanced to the max. There can be no other vision for these foods. When a chef does not have a vision for his food the battle to make the entrees spectacular is over.
Orelio becomes stuck and the owner see him being stagnant and comes in trying to continue a flow which never was. This can be frustrating. Many people who are passive aggressive will act out using avoidance tactics. He only wants to be there to get as few interactions pertaining to his job as he can without getting fired and even then he will push that limit and get fired as the owner says he has taken him back many times. When a person acts out like this they do not like their job, but they stay because they need a paycheck. Orelio’s
does not like what he cooks. He does not like the pay and feels he deserves raises but due to the condition the restaurant has been in financially he knows he will not get the raise that he wants. He has seen the chaos in the restaurant and has pushed the limits to see what he can get away with to justify to himself why he stays there. His friends and peers who are in the restaurant business as chefs or even table busters probably tell him their food is great and they get paid more, asking him why does he stay there.
Some probably do get paid more
and some may exaggerate as many do.
The grass seems to always be greener on the other side scenario.
Since Chef Ramsey came he knows his work is not up to par and excuses will not work. Orelio knows perfectly that a chef is supposed to be over the food and the rotten food he allowed to remain has no excuse. So he feels
like with the owner he can get aways with saying you only pay me enough to
cook, nothing else, but with Chef Ramsey he knows that will not flu. If you agree to be the chef then there are responsibilities that go along with that title.
If you know not agree you do not accept the title; period.
With that stress
he knows there will be changes but in his mind he is not going to cook food he does not understand or like,
take on all that responsibility, allow the owner to become strict with higher expectations,
get in his face when things are not up to par all while receiving a pay amount he does not agree with. The argument that happened when he walked out,
I saw him trying to do better but he had to get his flow to adjust
to the knew changes. With his boss not knowing how to show he is going to be more strict and not accept subpar work he used the mountain top technique that is supposed to be for himself alone to relive stress,
uses the technique in public in the kitchen which is humiliating and disrespectful to his employees. You use that technique for yourself not “ON” Others. At that point Orelio felt enough was enough.
But I guess Orelio is smarter than I thought bc he comes back to explain to Chef Ramsey. I mean he did walk out on national and international TV.
Who is going to hire him when they see that?
Since Ramsey came and created a better menu with fresh food Orelio may have more respect
for his place of work. However,
I do not know if his pride will allow him to accept the micro managing.
I don’t know if the owner will allow Orelio’s subpar working without confrontation. They have both tasted power. Orelio’s power to get away with crap like not cleaning the walk-in fridge when he feels over worked and under paid and the owner verbally letting him have it
when he does not like his behavior.
I think if they take some classes on maintaining a respectful work in environment and having respect for your work so that they both can learn professional boundaries, then it can work, otherwise it may not.
