Okinawan Sweet Potato Mochi

    I am always looking for recipes to use my okinawan sweet potatoes that I grow in my yard. I found this recipe a while ago and decided to try it. Very nice and subtle flavor. Not a "true" mochi, but it is called so because of the mochiko flour it uses.
    1 box of Mochiko flour
    2 1/2 cups sugar
    1 tsp. baking powder
    1 can coconut milk
    1 3/4 cup milk
    1 tsp. vanilla
    2 cups sweet potato puree
    Sweet Potato Puree:
    boil 2-3 sweet potatoes until cooked through (a knife easily goes in and out), cool, then puree in a blender until smooth.
    Preheat the oven to 350 F.
    Mix the first 6 ingredients together until well combined. Lastly, fold in the sweet potato puree until thoroughly combined. Pour into a large rectangular pan, cover with foil, and bake for 1 hour (usually takes a little bit longer)

    Looks amazing! We love the Okinawan Sweet Potato Haupia Shortbread from Coffee Gallery on the North Shore, and our daughter is addicted to Mochi! We definitely have to make this!!!! Thanks for the great recipe!

    I made this recipe only thing I didn't have milk so I used Heavy whipping cream equally to what the milk call for . my friends and family wants me to make again. My friends said it was creamy and delightful so will surely make again . My first time making it so thank you for this inspiration.

    Onolicious!! I didn't have any Okinawan sweet potatoes at home. I have made kabocha squash (same consistency of sweet potatoes) mochi instead. It was yums too! Red adzuki bean paste (anko) is my favorite! Great for Chinese New Year! I love the variety of mochi cakes you make. I did one recently with frozen blueberries with flake coconut. So good! Hmmmm a mango or pineapple one would be yummy. Ohhhhhhhh lilikoi!! Drool!

    Yummy! I have to try this. Never tried putting sweet potatoes in my mochi. I wonder how taro would taste in place of the Okinawan potatoes? I love, love your videos! Mahalos!

    In the Philippines, the purple sweet potato is called ube. The recipe looks so good.

    Oh man that looks good! I got a question,our sweet pots here are different, will that be ok?its also very hard to find the rice flour stuff. Is there anything I can substitute ?

    Oh it's purple sweet potato. Our grocery store sold some of those not too long ago but they weren't called okinawa. I don't think they have them anymore but I'm sure this could be made with regular sweet potatoes.

    What is the difference between Mochiko rice flour and regular rice flour? Can they be easily swapped out? Do you think our regular sweet potatoes (yams) would work, too? Thanks!

    Beth, I live in L.A., do you think I could find Okinawan Sweet Potatoes here? Also, what brand of baking pan was that? It looked really superior to what I have.

      I wonder if it is same as yam, purple sweet potato. They taste creamier than orange sweet potatoes.

      Check an Asian grocery store. On the East coast, we have Hmart and Lotte, both of which carry them.
