Ok Kimmie...that pear parsnip soup...my thoughts. First of all. You need to peel those parsnips. That probably contributed to the "earthy" flavor you described. And maybe why the texture seems a little off too. Second, brown up 6 slices of diced bacon and reserve. Then, cook some onions, garlic and your leeks in that bacon grease. Next, use chicken stock instead of veggie broth. I've never thought veggie broth had a good flavor. And last, after you finish blending it all and spooning into bowls, top with a drizzle of heavy cream, the reserved crumbled bacon and an extra sprinkle of black pepper.
The Italian sausage soup looks yummy! I made both your clam chowder and corn chowder recipes for a group of 26 ladies yesterday and they were both huge hits! So many compliments 😊 Thank you, Kimmy!

Love soups, especially hearty ones. The parsnip soup is challenging, I'm not a fan. I think the parsnips needed more roast on them and maybe roast garlic with them. I'd add regular onion and celery to soup and rosemary. A little bit of lemon would brighten it up as well. The first soup is going on my must try list!
After watching your video I decided to make the creamy potato soup with Italian sausage. It was delicious and a hit with all the family. I will be making it again for sure.
Yes, definitely more soups, please!! For the parsnip, my suggestion would be to grate a bit of nutmeg on the parsnips when you toss them in the olive oil, plus roast them a bit longer. Also, start the soup by sautéing a couple finely diced shallots and maybe a rib of celery first in a bit of butter before putting in the leeks and then proceeding as you showed. Also, when serving maybe top with a bit of toasted walnut to add a bit of texture to the soup. Hmmm, think I now need to add all these ingredients to my next shopping list!!

Thinking about the parsnips pear soup. Pears are a sweet profile. I've heard parsnips are supposed to be somewhat sweet also. I think if you swap out half of the parsnips with carrots and a sweet onion and then roast all of your veggies until they have caramelized, you'll have a sweeter, blended flavor. I would keep the broth the same so the soup will remain vegetarian. Another thought is to only puree half the veggies and have a brothier soup. I think I will try this recipe because I'm curious. My mom actually came up with a recipe very close to that one and we use kale and an Italian sausage in it. It's my favorite! I love soup for winter. We did a lot of soups last year too. I make a similar soup we call “Zoupa Toscana” (Tuscan soup 😉❤️).. It’s SO yummy and filling!! Instead of potatoes, use 4-5 cans of white beans (Cannelloni, Navy, or Northern), 2 Tbsp of minced garlic instead of onion, oregano instead of Thyme (pepper to taste- the sausage is so salty you almost don’t need extra salt), 2 cans sliced carrots instead of tomatoes, and fresh leaf baby spinach added at the end of simmering instead of frozen. I use just the chicken stock- no beef- but I’m sure both would be fine. All the other is the same. We top with crumbled feta cheese and that is the glorious kick at the end! 😋 Have to use the feta, if you like it.. You should try it this way- I bet you’ll find it just as yummy!! I like watching your video's. I like watching soup video's because I make a lot of different soups during the winter seasons. My best friend likes to make different soups also during the winter season. You could add onions to the soup you made.
I can't wait to try the 1st soup. I make a soup very similar to the pear soup that includes using the immersion blender. Mine has a 1/4 to 1/2 teaspoon ginger and after the blending is done I add Italian sausage or spicy ground turkey depending on what I have. I had to tweak mine years ago because my husband didn't like the texture of the soup just blended; he said it felt like he was eating hot, savory applesauce 😆 When I plate his up I add some red pepper flakes.

Love soup sason!.....when I make my parsnips soup ....I add grated carrot and a small rutabagga...and at then end a handful of peas I add the peas after I blend the soup...it's Not as earthy looking and tasting..the carrot and rutabagga make it sweeter..brighter. The peas give it a pop of color. Btw...your taco soup and corn chowder is a couple of our family favs!

Just made the sausage potato soup. I only had dried thyme - used about 1 teaspoon, and half and half instead of heavy cream. Yum! The recipe is adaptable. I think mushrooms would be a good addition or even white beans. I’m always messing with recipes 😅

Also I’ve been meaning to tell you, next time when you make your green split pea soup, try the yellow pea, you can get them from Amazon make your soup the same way, just make it with the yellow pea, it’s so good, that’s the way my Oma made it my Mom and now me. 👍❤️🦋
I think I would add onion and perhaps butternut squash that is roasted with the parsnips. Maybe some chili powder? The pears would keep it from being too spicy or add a bit of sugar if needed. Thanks for the recipes!!

Hey! Love your videos!! I would totally recommend peeling the parsnips. Parsnips are common vegetable here in England, and 90% of people here Peel them I think they taste much better without peelings. Also could try peeling peers. Maybe add something more sweeter as all of the ingredients on there own are more harsh tasting.

The second one looked like cream of wheat in the bowl, so maybe a bit of brown sugar and a splash of milk 😂 Seriously though, if I asked the men in my family, they would say that second soup needs meat lol. Maybe some sausage stirred in, after it's pureed. Or some carrots to give it color. The puree factor is really what's throwing me with it, not sure I would love the texture (or lack of). I make a ham soup with parsnips. I roast parsnips, carrots, rutabaga. I use veg broth and add the roasted veggies and cabbage. Thyme and bay leaves, salt & pepper. Add left over cooked ham at the end to warm through. Make sure it’s not sweetened ham. No glazes here! Sometimes I’ll add cannelloni beans for a heartier soup. Soo good!

Instead of pears use carrots! Parsnips, yellow onions, and carrots taste delicious together! Also maybe add an apple for added sweetness!
