Mashed Potatoes Recipe

INGREDIENTS:
-700-800 grams starchy potatoes
-1 Tsp salt
-100g softened butter (Unsalted)
-1/3 Cup heavy cream/Half-and-half
-½ Tsp onion powder + ½ Tsp garlic powder (Optional)
-Salt + Pepper to taste
-Peel the potatoes and place in cold water. Cut them into small cubes, making sure all are relatively the same size.
-Transfer the potatoes into a large sauce pan and fill with cold water, enough to fully cover the potatoes, add 1 Tsp salt. Place over high heat to bring to a boil, then reduce the heat to maintain a rolling boil. Cook for about 15 minutes or until the potatoes fall apart when poked with a fork.
-Drain the water and place the potatoes back into the sauce pan. Keep the pan on low heat for a few minutes to dry the potatoes a bit or until there is no longer large amount of steam.
-Transfer the potatoes into a large bowl, gradually add the softened butter in small amount and mash them using a potato masher.
-Heat the heavy cream/half-and-half over low heat until simmering. Season the mashed potato with salt and pepper, onion and garlic powder (optional). Pour the heavy cream; gently stir to combine.
-Garnish with some melted butter, crushed pepper and serve!
Notes: Refrigerate leftover potatoes in an airtight container for 3-5 days, reheat before serving.
