The 3rd piece which you had no idea what it is for is intended to support the back area in the middle to prevent sagging in the middle and in the long term it will also prevent splintering.
I’ve been so curious to know as I’ve only seen it once before…instead of the iPad/tablet holder could you use the steam deck/elgato holder for the iPad so it’s more minimal & you don’t see the “hooks” on the front of the iPad?

2:46 that piece is the 3rd leg for the back middle part. It keeps the entire thing from sagging in the middle when you place your monitor on top
