- This is a baked Fish and Corn Souffle, which I learned from my Dadar Catering Hotel Management Institute in 1978-79.
This video is dedicated to my two cute little grand daughters who are just 2 1/2 years old. They both love fish, corn and cheese!
The fish stock I used in this video, I used it in my fish curry.
You can replace the fish with chicken.
For my vegetarian friends, you can use vegetables like cauliflower, broccoli, etc. And you can replace egg with fresh cream.
Do try this dish and let me know how you prepared it.
Ingredients :
200 gms Fish
1 no. Bay leaf
1" Cinnamon
3 nos. Cloves
200 gms Sweet corn Cream
200 Cheese
1 no. Egg
Dash of Pepper
1/4 tsp Salt
1 no. Capsicum
White Sauce :
1 tbsp Butter
1 tbsp Flour
150 ml Milk

When did you add fish to the souffle
After the white sauce was ready, I took it off the fire & let it cool down. I then added the cooked fish and other ingredients.
