I don’t like the metallic taste of baking soda that I often taste at Chinese restaurants. Can I wash it out first after marinade the beef and then do the sauce?
I know it's a translation thing but I think you should also use this moment to educate your viewers like you always do. When your dad said to leave the beef in cold water to have the "blood" come out, it's not blood at all - it's myoglobin. They're protein in the form of liquids. People get uncomfortable thinking it's blood. Just wanted to stop this misconception and inform them properly. Have a nice day and keep up the great work. Edit: and I spoke too soon. I'm a professional cook, so I find most cooking youtubers more entertaining than educational, a lot of their kitchen hacks are common place but these channels which are more about the parents/grandparents and their lifetime of cookery teach me the most. That lemon peel idea in the Shaoxing and red wine, the clever use of different types of acids, price of admission alone right there and it's just a throwaway aside.
I too work in a chefs kitchen...recipes and chefs specials. I like also the love from this channel but the simple recipes here make me happy (we don't do "Asian American" in the kitchen I work so I come here and to "souped up recipes"/another awesome channel for "Asian" delights) I got a wok for father's Day and bought about every ingredient and garden most and but fresh ginger) When I can't sleep I flop the wok around and then take to work and let others sample my experiences . I just work part time in chefs kitchen on weekends....my full time job I work for a chain "steak house"...I am an director of operations trainer trainer for line cooks/prep and anything back of house/kitchen specialist ....I train trainers and organize ..4 years almost/haven't missed one day...I ran a construction company for 20 years but cooked as a kid in several style restaurants..and the whole time making lots of money doing mold and fire remediation and always in back of my head I missed cooking so I quit on Thursday and went and got work in restaurant industry on friday...don't make real money now but am alot happier ! Any time I can't sleep I experiment with foods/spices and new ways to do old recipes...I do ok people say lol

Toisanese diaspora from Singapore here. Thanks for this channel! It's making me very nostalgic for the family meals my grandmother made when I was young. We still do some of her recipes but a lot of info has been lost. I feel like many of the other viewers who are trying to reconnect with our roots through food and uncle Lau's detailed breakdowns with cooking tips are super helpful! Would love to see more classic toisanese recipes like braises (esp mushrooms) and soups. I'm currently trying to recreate my grandmother's hou see fatt choy with sustainable ingredients. An episode on salted fish hamyu would be nice because it's a key ingredient in toisan cooking that I don't know how to select or use. Would love a lapcheong or dessert episode too.
I love how you eat together and have a Q&A at the table while on camera, it's very informative. Keep this up as it's enjoyable watching your family's interaction during dinner, not many families enjoy this anymore as life becomes so busy but it's one of the ways to keep the family together 💛💛
