@SR Z 教你腌的办法,小苏打可以放一点点,或者不加小苏打,用松肉锤稍锤打一下牛肉片,加一点盐、蚝油、生抽、白胡椒粉抓均,然后重点来了,将淀粉加蛋清搅打至充分混合,然后加入牛肉朝一个方向搅拌,让水份充分被牛肉吸收并挂浆均匀,然后封上油避免肉片之间粘连,轻轻抓几下,不要让挂好的浆脱浆,腌渍十五分钟左右就可以炒制了,另外还要注意的是不能炒老了,爆炒至八成熟就起锅,让余温使肉全熟就好,必定鲜嫩多汁。
yea - it's good don't forget the baking soda. Also I recommend not cooking the raw onions but garnishing the dish with onions. A restaurant here in CA does that and it's really refreshing with the beef.

@@MagicIngredients I don't know what kind of setup you have with the microphone, but my amateur guess would be that the gain was set a little bit too high. It sounds like what happens when you turn speakers or something up too high, the increased volume makes all the sounds blur together a little bit.
thanks for the recipe! I'm not sure whether it's just me, or is the sound coming from this video seem to crackle (like playing the sound over a cracked / broken speaker). I'm using a very high quality speaker to listen, so that's probably why I noticed this problem. I don't seem to hear this from any other youtube videos. Your other videos dont seem to suffer from this problem too. It is possible the problem comes from over-amplifying the video's volume during editing, or maybe the microphone is not working properly anymore. Just thought you should know :)

其实也可以尝试另外的一种方法,见"老饭骨"干炒牛河的做法。牛肉切片,放入葱姜水,用手抓拌知道水被完全吸收。加一个蛋清,重复以上步骤。在加淀粉抓匀,然后油封。这个方法我已经试过了,非常成功 😄

这里的小苏打起了关键作用。以前在国内去买牛肉用来炒的时候,牛肉档主帮我切片后都会问要不要撒上小苏打粉。一般我回答“不用“,因为这样失去牛肉独有的鲜味。只要选对肉,不用盐(盐会使牛肉变柴)而改用生抽和蚝油(或少许糖)少许淀粉和油腌制,锅里多一点油,猛火快炒一下就很嫩。甚至切片蒸也很嫩。牛展这种做法也会嫩。

大排档或者路边摊喜欢放嫩肉粉或则苏打,其实会影响肉的味道和品质。个人分享一个专业的厨师都用的方法,比较好的饭店都是放淀粉和蛋清,均匀后,使劲用手快速往一个方向打(关键),1~2分钟,有那么点像打鸡蛋。这样牛肉,炒出来更好吃。当然炒的时候也是有些技巧的,,,,
有小苏打带来的额外的味道,很容易影响牛肉本来的口感和味道 @@xiangli7086

只有不新鲜的冰冻牛肉才会腥,我也不喜欢放小苏打。最经典是我岳母的做法就跟小高姐的一样,我宝宝说很好吃,我一出手,我宝宝就再也不吃我岳母做的牛肉🤣🤣🤣

小高姐,我已经做了两遍了,第二次比第一次有提高,但第二次由于肉切的很厚,吃起来像吃棉花糖一样的厚度,里面很嫩,但由于过厚也要嚼好一会儿,我决定下次还要做,做到满意为止,我太喜欢这个牛肉的吃法了,以前不会做只在餐厅才能吃到这样的做法。

Also using Black Pepper is fine will give it a stronger taste, regular soy is fine if you don't have dark soy on hand.

thanks for the recipe! I'm not sure whether it's just me, or is the sound coming from this video seem to crackle (like playing the sound over a cracked / broken speaker). I'm using a very high quality speaker to listen, so that's probably why I noticed this problem. I don't seem to hear this from any other youtube videos. Your other videos dont seem to suffer from this problem too. It is possible the problem comes from over-amplifying the video's volume during editing, or maybe the microphone is not working properly anymore. Just thought you should know :)

不想用小蘇打軟化 可以加蛋清。 懶得分蛋黃蛋清 可以直接打一個蛋 炒出來的肉一樣很嫩 沒有小蘇打的味道。

我家會先用淀粉醃一陣子,夠天然,效果又好。
其實呢,有鳳梨皮或木瓜皮跟肉一起醃過一樣也可以達到軟化肉質的效果,如果你真的很在意"天然" 這檔事的話。但實際上的化學反應都是差不多的XD 建議懶還是用小蘇打
用小苏打是有道理的!中和肉里的乳酸 加热蛋白容易变性! 温度控制在94-96C 最好!

好棒,,,臺灣好象沒見過這樣大塊的牛肉,都是切好的,,,青椒也沒這樣薄的,都是厚的,不然就是朝天椒,,口水
