Hi Eddy - Yes, you can absolutely use round cake pans for the ube chiffon. The reason I used the rectangular jelly roll baking sheets, then cut the chiffon with the 9" cake ring after cooling, is so that the chiffon rounds are more similar in size to the 9" flan custard rounds. When you use round cake pans, the round chiffon cakes might shrink a little when cooling. But it will still taste delicious! Hope this helps!

Hello Keann, thanks for your comment! Yes, you can use a 8” round pan instead of the jelly roll pan. We used a rectangular pan and cut out circles to create straight edges. The edges might shrink a bit when baking with a round pan, so the cake edges won’t be as straight and flush with the flan layers, but it will still look great and taste delicious! It will be fine regardless during winter / colder climates. During summer / hotter climates, I’d suggest keeping it cold in AC. You may also a more stable frosting like Italian buttercream. But it will make the cake heavier / alter the texture. Hope this helps! 😊

Hello - thanks for subscribing! We use dairy. Whipping cream, evaporated milk, or Nestle all-purpose cream cannot be used as a substitute for heavy cream, as it doesn’t have a high enough fat content. Heavy cream has a higher fat content (about 35-40% fat content), which is needed for the frosting to whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. Make sure you're using cold "heavy cream" - also called "thick cream" in some countries. Hope this helps! :)

Hi Jean - if ube halaya is not available, you can substitute it with ube powder that’s been reconstituted with water per packet instructions into an ube paste and using an equivalent amount of that paste. Or you can just leave out the ube halaya and rely on the ube extract for the ube flavor. Hope this helps! 😊
