- Today's episode is about an easy Ube Custard Cake recipe. Ube Custard Cake is a chiffon cake infused with ube flavor (purple yam) with a topping of sweetened milk and egg mixture known as custard or leche flan.

The ingredients that you will need are:
For caramel:
1 cup white sugar
¼ cup water
For leche flan:
6 egg yolks
1 cup condensed milk
¾ cup fresh milk or evaporated milk
1 tsp vanilla
For the cake:
4 egg yolks
1/3 cup sugar
1/4 cup oil
1/4 cup milk
2 tsp ube extract
purple food coloring (optional)
1 cup cake flour
1 ½ tsp baking powder
1/2 tsp salt
For the meringue:
4 egg whites
1/2 tsp cream of tartar
1/3 cup sugar
Preheat oven to 180 C

Wilbert Atienza no I didn’t. I did exactly they she did. I cooked both at the same time. I had to cook in 350 degrees for about 40 minutes

Hi, maybe try around 160 C about 20minutes or until toothpick inserted in the center comes out clean

Hi can I make this in a 6x3 pan? What adjustment do I need to make with the ingredients and how long should I bake it for in oven and in a steamer? Can I cut the condense milk to half? A whole cup seems very sweet. Thanks!
Yes po. Same lang po maybe you can do half po ng ingredients. Same time pa din po for the baking time.

Hi Bobby, you can double the recipe for the cake, as for the custard try this recipe (10 egg yolks, 1 can condensed milk, 1 can evap milk and 1 tsp of vanilla)
Bona's Kitchen ....since the cake’s recipe will be doubled for the 9x13 pan, will I also double the recipe for MERINGUE and the CARAMEL? And how about the ovens temp, will it be the same preheated at 180 deg C? I’m excited to try this out and your other videos too!
Yes double the meringue too. I think no need to double the caramel and yes same temperature 180C but you may need to bake it longer. PS. Don’t forget to cover the top with aluminum foil halway through the baking time x

Hi Bona. Are you using a convection oven? We just got a new electric convection oven replacing the old convention oven. What will be the temperature and baking time using convection oven (top and low heat)?
Hi Edwin, I am using convection oven too 😊 Since your oven is quite new it might get hot quickly, maybe use lesser temperature than what I have used try at 170 C . I also recommend top and bottom heat x

I think you just need to bake another batch chill them on fridge for few hours and put the two together x

Yes po 180C usually around 10-15mins
I had a stove only Fahrenheit Conversion , that’s 180 C is equal what is F?

The flan/custard mixture, you mentioned to just set it aside.
You don't need to steam it or something? It will harden by itself?
Hi, the chiffon cake mixture will be on top of the custard mixture and you steam it
