It's probably just a brain thing misinterpreting patterns. Generally in positions in which people allow you to take that pawn, the bishop's defending the knight, so the rook moves with tempo on the queen, maybe the queen gets trapped, and so on.
But what really happened is the opponent was acting on principle of not ever giving Eric his gambit. If you can take a Rook with check against Eric, look for some other move that doesn't take free material!

Eric you are definitely the most entertaining chess streamer and content creator when you're playing like this. It shows your humanity and charisma, but also what a creative beast you are. It's trippy and exhilarating at times. You have the same competitive nature and informative/direct temperament that I do, yet it still blows my mind that you talk joke, commentate, and draw arrows in what has turned chess into an APM sweaty game. I believe that you shape the things you do to fit your interest, rather than letting their general essence define you. I suspect there are very few things suppressing your ability to do this at the highest level, but I relate if you feel apprehensive to sacrifice this joyous freedom to work to do so. Anyway, I hope you become a GM, or get whatever you want in this world, because you're awesome.

19:00 "Oh! That's mate." Glad to know an IM also does that.

Never heard of the Herrstrom gambit in the Zuckertort opening before
, but it was imho the coolest of them all. My favorite gambits are the Belgrade gambit, the Von Hennig - Schara and the Fred.

17:20 white has an amazing move: Nd5!! Hitting the queen and threatening ne7#

A very nice line is 26. Nd5! Qa3 (defending e7 and avoiding losing the queen) 27. Qg3!! Threatening Nf6# and the queen again ,and if 27...Qxg3 then Ne7#

That third game was insane! What a turnaround from a guy 500 points lower! I stopped at every move to see what I would do and white really surprised me towards the end.

The wing gambits were definitely the most fun. Thanks for the entertainment, this was a really fun chess video.

The Smith Morra where you gambit-ed your bishop was a really beautiful game.

You asked to let you know if we made it to the end. I must say the Jerome is my favorite. Plus Traxler when it gets messy. The last games ending was my favorite. Thanks for the gambit video.

That Herrstrom game felt so weird, such an empty board, and the first 8 moves were just bullying the knight

I loved the game where was just pawn moves. I'm always so scared to lose on not developing correctly.

There is some chess content showing famous "10+/many pawns only moves" games :) - recommend it - these are really some interesting games - later you only need to develop with tempo :)

English opening wing gambit - you had a smother mate when opponent played the rook's pawn to frighten your knight. This literally occurred immediately after you were envisioning smother mate. I will blunder six times minimum, since I am not good.
I really enjoy your gambit material

38:30, Eric blunders the rook and opponent blunders the opportunity.

The best gambits are where you blunder but call it a gambit and end up winning
