Hey 🆎 I just watched a sister make Dirty Rice with chicken gizzards & liver. She put the gizzerds in a Instant Pot. She chopped the uncooked liver down and sauteed it in butter. I believe that’s the authentic recipe. I didn’t know gizzards & liver were in Dirty Rice. Your version looks really good.😊
Being from Baton Rouge, I can tell you that down here in South Louisiana we call this dish rice dressing because its made with ground pork or beef. Dirty rice historically is made the same but organ meat such as livers, hearts, and gizzards are used. I know you made it by excluding the livers for other people's taste. It looks good.

I’d add a pic if I could, but we made this with jasmine rice, and without reading your variations until after, we added shrimp, tomatoes, and Parmesan cheese, and we’re discussing some of the other variations you call out before reading that far. For the andouille sausage…we had eckrich and it was perfect in the bubba gump copy car seasoning we used for the shrimp.

I love dirty rice, my mother would use left overs meats in her dish. It would always be pork chop, chicken, and sausage. It may have been ground beef but I don't remember it! My friend made some and she only had ground beef, it was good but my mother is better! 😋😋😋😋

My family is southern Louisiana and we did not put organs in our dirty rice.

Jambalaya usually does have shrimp and tomatoes and chicken.
While that is a great option, but I definitely prefer the gizzards and liver option for me. It really reminds me of Louisiana.
