How to Season a Donabe (Japanese Clay Pot)

  • Welcome to our channel. This is a quick guide to how to season a brand new donabe fore the first use. Donabe is Japanese clay pot that is commonly used for soups, stews, hotpot, etc.
    it is very versatile and will last a long time if taken care of. However, as with other clay pots, it should be seasoned before first use.

      Probably just eat it like you would regular rice, crack, a raw egg over it, some furikake, soy sauce, and MSG.

    I would have thought that the starchy water from rinsing rice would be ideal to use as the 70% water component, and then simply add more rice?

    The donabe pot that I purchased is fully glazed, including the bottom. Does it still need to be seasoned? Is it still able to go in the oven?

      Yes, still needs to be seasoned. Look online or read instructions that come with the pot.

    After seasoning the pot do we need to wash it it soapy water after every cooking?

      Yup. I still use dish soap to clean it after each use, but just make sure not to soak it in soapy water for too long.

    I don't understand. Isn't it glazed? Do you need to season glazed clay pot?

      I would think no need to season because of the glazing that sealed in the pores. Then again, I am not an expert on clay pot. Hopefully someone knowledgeable can answer your question.

    Why rice is used to season the pot? How about I pour some cooking oil, swirl the oil round the pot & add things like onions gingers to season?

      Rice gives off starch when cooking and that starch will embed itself into all the microscopic holes in your donabe, sealing it during the one hour simmer. While oil also goes into the holes, it will not seal. Instead it will simply burn off when cooking, exposing the holes.

      Hi there, I got this pot from a small shop. It is a “banko ware” donabe from a company called “森羅”. I think it is a local Japanese manufacturer since I have never heard of it before :)
