DEEP DISH CUSTARD PIE
3 CUPS SUGAR
2 TBSPS. FLOUR
1 1/2 CUPS CREAM (EVAPORATED MILK)
1/2 CUP BUTTER
9 EGGS, BEATEN
1 TBSP. VANILLA
1/2 TSP CINNAMON OR NUTMEG
Pre-heat oven to 450 degrees. Bake a deepdish pie pastry in oven for 15 minutes. Mix sugar, flour and cream and beat until light and frothy. Add beaten eggs, vanilla, and spice. Place in a saucepan and heat very slowly to a just warm temperature. (DO NOT get it hot only baby bottle warm). Pour into a deep dish prebaked 9-inch pastry. Put butter on top of pie in generous slices. Bake as for custard pie about 40 minutes, starting with a hot oven (15 minutes 450 degrees) then reduce temperature for the remainder of the baking (350 degrees). I overcooked my pie, and I also think that this old recipe has so much sugar that it settles in the bottom of the crust and may cause the pie to have two layers. To prevent this use 2 cups of sugar instead of 3 if you wish. If you want to make the authentic 1800’s recipe, make it as I did but use this baking time.

Tammy, this looked like my grandmother’s egg custard and buttermilk pies. Hers always had the 2 layers when she put the butter slices on top. But on some of her egg custard pies she would leave it out and it would be the one layer. I think it’s the high fat in butter maybe, not the oven.
But either way, I LOVE when they have the two layers. So good!

I made a custard pie last night! 3 c. Milk, 1 c. Sugar, 4 eggs,1/4 t. Salt, 1 t. Vanilla. Liberally top with nutmeg.

I don’t even know if I like custard pie, but DAAAANNNNGGG that looks amazing! When I was a child in the 1970s/80s, my step-grandmother who lived in Midway,Tennessee, would make us a butterscotch pie. I wish I knew how it was made! It was so delicious! All I know is it had eggs in it lol

This is a great recipe. My husband's Grandmother put Black Raspberries (in season) on top when she made her custard pies.

I love egg custard pie, nobody in my family don't care much for it ,so I would just buy a piece at this restaurant they made really good egg custard but they went out of business ,I can't wait to try this recipe it looks so good .

Tammy, I remembered you saying the first custard filling got under the crust and made a mess BUT this one sure make up for it. My mamaw & mother made one similar but not sure if it was exact. It made my mouth water when you cut it! TY for sharing the old recipe.

My Granny also would put meringue on her Egg Custard Pie. She'd put it on when it was almost done. Boys howdy!!! That made it SO good! What I wouldn't give for a piece of her pie, still slightly warm! It was heavenly!!
Line the raw pie shell with parchment paper or foil before putting beans so it will get crisp.

This was one of my mama’s favorite pies. She loved custard. She would pour custard into ramekins and sprinkle nutmeg on top. It was delicious!

When my Granny made her Egg Custard Pie, she would take a fork & stir the pie about halfway thru baking time. This would help make sure there weren't "layers" from the sugar settling. I guess that's why Granny did it.

Hello Miss Tammy, Your pie looks really good. It reminds me of the lovely Custard Pies My Mom and Grandma used to Make. Of course they were farm Women and we had our own eggs and MIlk and home churned butter. It is so nice when one has REAL ingredients in abundance. Sometimes they would turn out a coconut custard pie too... Still a favorite with me. That recipe is 143 years old!!!! Thank you Miss tammy..... Rick

Anyone notice that the pie shell out of oven with beans, the Pie crust Didn't come up to the top. and then grow back? Lol. Pie looks good and I will make one. But dang something looks different about the before, after and finished pie crust. Mine often shrink too,that's why I was paying attention
My pecan pie recipe is a custard-type pie. I bet this would be good with some pecans in it. 😊

My mom whipped very soft butter INTO the filling. I believe thats why you got 2 layers. OR AT LEAST add butter half way thru AND on the top. Its the FAT ❤

I was able to get the recipe off your website but the ingredients don't match what you did. The nutmeg was put in egg mixture with the vanilla. You used 9 eggs but recipe says 5? There was also no mention of putting it on the stove for a few minutes. I'm confused.

No sound , how much Suger was that. My cousin had baking classes in school. Her name is Tammy Elizabeth east. My neighbor was from Sweden her name was ester. We lived near bluedprings Orange City Florida. Nicknamed the fountain of youth by Ponce de Leon.

Beautiful pie. I wonder if the eggs should have been beaten more. The layers almost look like egg white/egg yolk.
I think it was the sugar. I think it had so much sugar in it that the sugar settled into the bottom and made it look more clear where the sugar was
I love...love...love...custard pie!! My grandmother and I used to make them. I cannot make a decent one...have tried over the years and it always is an epic fail. Watery crust...never set...just wasted my precious ingredients.

Cooking the pie crust 1st and putting the red beans in it is called blind baking instead of using the red beans you can buy pie weights they’re little balls of terracotta and all you need to do is put baking paper on the pie crust pour in your pie weights and cook for 20mins remove the weights and cook the crust for 10 mins or if you’re cooking it for a long time skip the second baking I personally prefer using pie weights because I get a beautiful crust rather then using beans as I find the beans are not heavy enough
