Did the same thing with Red Boat Fish Sauce , a bit too fishy taste . I maybe will add umami with Lee Kum Kee chicken bouillon next time . I really like this !
IMPORTANT NOTE: Heat is very important. Keep it low to have it come out fluffy. High heat will make it too hard and ruin the texture. It essentially should have a soft tofu-like texture.
Filipinos have something similar. Fried fish boiled in sweet and sour broth, chopped veggies, and finished with scrambled eggs but they, most of the time, come out harder than I would like. Thanks for the tip!
