Great presentation. Always de bubble ( take a chopstick or anything to remove any bubbles in jar after placing jalapeños in jar) the jars before putting on lids and always wipe the jar rim before placing lids. If you don’t there could be something on the rim that would prevent jar from sealing.I dip paper towel in a half vinegar half water and wipe my rims.
I love this recipe! Last year was my first time making cowboy candy and my husband went through it soooo fast. I planted extra jalapeños this year just for this purpose!
I love the leftover syrup. I have an idea to reduce it down and use it as a hot squeeze finishing sauce to drizzle over bbq chicken. I will look for those lemon and pumpkin jalapenos to grow next summer! 🌶️
I've seen Cowboy Candy recipes before and never made it because I was sure how to use it. I was glad to see you answered another question with a couple ideas on how to use this. I'm thinking this would be good to use in place of relish on anything you would use relish on. I might try this this year since my jalapenos are producing like crazy this year! Thanks for sharing!!
I do not check the canning bath temp. Just bring it to a simmer (~180°F) and put jars in. If you can, try to time it so that the jars are still hot from the dishwasher when you fill them. Abrupt temperature change can break the glass.
I don't have a dishwasher. Gently place clean jars (along with their lids) in barely simmering water until ready to fill. Briefly drain as needed on a wire rack placed over a cookie sheet or clean kitchen towel. Then fill, seal (finger tight) and process in the hot water for 10 min.

@@WelcomeGroveHomestead i just made this the other day and double the recipe. It only made 5 pint jars, but I did pack the jars a little too much. I think next time I won't pack so much and maybe I'll get more jars. I tasted it after boiling and it tasted really good , sweet then hot. I'm hoping after they sit for a few weeks it will taste a lot better. Thank you.
Think of it as a hot squeeze sauce; Reduce the liquid after boiling the peppers. I like to use it as a finishing sauce on bbq chicken. It's delicious and addicting 🔥

Hi Amanda, just wondering if you would blitz some of it and mix it into the one has no jalapeno for a thicker consistency?
Are you using simmering and rolling boil interchangably?
Add onion to them stretches the peppers add as many as you like hen you have onion and jalapeño to add to your dish :). Great video!

What do you use the extra syrup for?
It can be used in a marinade for meats, or can make a great salad dressing!

We love mixing it with cream cheese and putting it on crackers. It is great in turkey sandwiches too!

This recipe only made 3 pint jars. Would i just double or triple the recipe to make more jars?
Yes you just multiply amounts to make more. I wish so badly that it stretched out to making more jars in a batch!

Question Why do you have to wait a month to open it?
If you open it prematurely the flavors haven't fully bloomed and it doesn't taste as good

You need a canning funnel.
I actually have one but couldn't find it until I was done! Lol
