Interesting to learn Sambal Oelek was one of the OG common spicy condiments in the US, too. Here in the Netherlands it certainly is (big Indo population here), so much so that it became a proverb in Indo-Chinese takeaways: "Sambal bij".

I make my salsa macha with chiles de árbol and piquines on top of the chipotles. That way it packs a punch alongside the smokiness of the chipotles
