I grow celery just for the leaves for dehydrating. This year, because we have rabbits in the 'hood...I grew them in planters on my back deck and it worked very well. I dehydrate the leaves on the fruits/veg setting. When it's dried and cooled, I rub it through a wire sieve to remove stems. Using kitchen shears gets them off the tough garden grown stalks really quick and easy. I just snip the leaves off the stem and into the big colander to wash them.
Bev, thank you once again for great info! I grew LOTS of celery this year. I too dehydrate lots of celery. This year we were almost, almost , getting tired of eating fresh. I have my youngest niece(who lives with us) in college and she raided my pantry to take to college with her girl friends. They were so amazed with what you can do with all the dehydrated foods. The next generation learning! I love it!! Also have a niece who lives in Manhattan New York and they have NO storage space. When she comes home she gives me a list of things she needs for her pantry. Of course, I take care of her "order". Love this!! Love you!!!!!!!!!
I'm glad you made this Sweetheart. I bought that very dehydrator. I did some zucchini and potatoes. I blanched both but I'm sure I sliced them too thick. The potatoes actually have dark spots. I'm gonna use both in a cheesy casserole and try it again. I need to look back on your dehydrating videos. Thanx Bev.
Hey Mrs. V. Thanks for redoing this video - I had forgotten the dehydrating option. My kids are getting to the age where they aren't always home for supper, and now the middle one is off to University, so a bunch of celery in the fridge often goes bad before I can use it. This drying reminder is great as I can just take half of the celery when I get home from the store and dry it right away - rather than pulling out the big pressure canner to do 6 bunches, I can just do a little bit! ;-) You taught us how to CAN celery a few years ago and hey-doodle that has been so useful - I can in 1/2 pint jars usually, but sometimes pints - very helpful if I am making a soup or stew, and I use the liquid as part of my soup broth. YUM.
I just scored 12 stalks at 50¢ each. And wanted to store them somehow. I impulse bought a 10 tray stainless excalibur a few months ago for jerky. And now I have another use for it. I didn't know if blanching was needed to help maintain the texture. This helped me. Thanks.

You can save the root end, rest it in a little water till it grows some roots. Plunk it in a little pot in a sunny window. It will grow more leaves. I even planted one in my garden this year. Works great. Thanks for the video, I will be drying my celery this year
i just did two big bags from costco - the lazy-ass pre-cut/washed stuff... two big bags dehydrated was just maybe about 1/3 of a quart mason jar... mostly water!! i use the dehydrater most of the way, then once it's mostly dry i put it in a colander on the black tablecloth out in the sun, covered with a tea towel to dry it the rest of the way
I am going to dehydrate celery today so I looked up your video. I knew tour's would explain well. Didn't realize that it would be so small when finished. I'm going to teach a dehydrating class in September to my Master Gardener group. Thanks
Blanch it ... that's what I did wrong!!! Thank you!!!!! The slices look to be about a quarter inch thick. I tried thinner, but they turned very, very tiny ... super tiny, but I didn't know to blanch them, now I do. Thank you!!! Subscribed. I use the root end of a bunch placed in soil to regrow it.
great share- we do celery too but ours doesnt go on sale until around thanksgiving but we stock up then- got my apples and pears done now working on peppers and cherry tomatoes- then jams jams jams and more jams- love ya
I'm so happy to see you! I've missed you! I dehydrate celery AND I dehydrate the celery leaves! They are very tasty and I have no waste! I'm doing chopped apples and celery again later this week! Plus I dehydrate my apple peelings! They are good for Apple teas, apple juice and apple jelly! Again I waste nothing. And all is vacuum sealed in jars. I love watching you do anything! Salt of the earth!

I love celery & put it in almost everything. I take the less than perfect pieces, dry them separate, then grind them with sea salt for a delicious seasoning salt. You can add other spices to your liking.
You are such a wonderful person and your videos are so fun to watch... I do have to tell you that I also dehydrate as much as I can but I have never had any troubles with celery and I never blanch it...I wonder if it has to do with the ancient dehydrator that I use but really my celery re-hydrates just fine. Don't you just love how much you can get in each jar...Thanks for sharing this...

I grew Tango a few years back and had quite a bit, unfortunately I didn't blanch and it all turned out rubbery. Wakefield, I do believe there was a train station there. I live alone and my produce kept going bad on me. Celery and peppers just don't last. My yellow squash turned to liquid. Nasty !!! I cannot eat it all before it expires. So I got a dehydrator. Now I can dry produce before it spoils and add it to soups. Right now I am doing celery as my first time. I love to cook so this should be fun! It is work but I enjoy cooking. I was a cook at the nursing home. Thanks for teaching me.
When making celery powder, I just cut and dehydrate the celery (including leaves) then powder it...no blanching...otherwise I do exactly as you! ~ Blessings
Linda Bowser another method...... I slice off a thin piece of the bottom of the root--and stick it in a jar of about an inch of water. Stuck in the fridge and it stays a long time... just keep adding a touch of water when it gets low
The prices of all the fruits and berries at our farmers market place are super expensive. I love yellow fleshed watermelon and for a small watermelon they charged 18 dollars so I got a 5 dollar piece for me and my dad to have a small taste.6 small figs was 10 dollars.
I feel like your pulling me out of a deep depression just lisening to mom well ya know what i mean mom is long gone but i sure miss her but you give me a little advice and it means more than ya realize thank you mean it im in tears hard to get out of.bed but my husband bought me two big deluxe dehrator anyway ive been drying peas and carrots and i worries about onions and celery big time corn too i want to be the soup lady you understand so i have a big group to feed and need all the help i can get to do it rite i dont want to waste anything thinking of sliced potatoes but i dont have a slicer yet well aunty thanks
I love dehydrating! You got me hooked long ago. I finally got me a Nesco last winter and I've had an all dehydrating this summer. I ended up throwing it out because I didn't know if it was any good. I was keeping them in glass jars, but not vacuum sealed.
Wow!! I have a large family (8 kids so family of 10) and I'm always needing celery but get tired of buying a stalk just to throw half of it away!! Why didnt I ever think to dehydrate the left overs?? I'm going to go buy a bunch just to dehydrate now!

lgwjr white no you can't reconstitute cooked and dried ground beef to make into a meatloaf because when you make meatloaf you use raw meat and even though you're dehydrated Burger would be reconstituted it's still going to be cooked but it's great in soups stews and sauces

moonlite daze a quarter cup of dehydrated celery should give you three quarters of a cup to a full cup of rehydrated I usually put about a tablespoon to 2 tablespoons in a pot of soup for 3

Hi Mrs. Volfie. First I must say how much I love your channel. Second I have a question about storing dehydrated food. Some of my food, ie: berries, tomatoes, onions are crispy dry when I first put them into sealer jars. But over a few weeks I find that they go from crispy to leathery even though they are tightly sealed. I don't have money to buy oxygen absorbers or silica packs. Can you give me some tips for long term storage of these items? Will a jar sealer for my food saver solve this problem? Thank you in advance.
Broccoli and Cauliflower are better blanched and frozen..you would have to slice it awful tin..blanch it and you would get a lot of mushiness in reconstituting!
Great video!! I subscribed 😊 I have 2 questions: do you rotate and/or rearrange it during drying? Also, how do you re-hydrate for soup? I usually sautee my "trifecta" before adding the stock and other ingredients....could I just throw it in with the carrots & onions? Oops...one more, how much dried = rehydrated?

Linda Bowser I tried this Linda and I got some spindly roots but it grew a few leaves but the Celery around it just rotted so it went into the bin.

I will grind my dried celery also. I like it as powder to add to everything. Won't have to buy expensive powders anymore. Yay!

I use my Vidalia Chopper for celery, mushrooms, etc. for dehydrating. Makes the process go more quickly!

I've found that a Britta Filter fits in the hole perfectly ! lol

Once you put the dehydrated celery in the jar do you use a foodsaver to take out the air and store. Thank you for this video.

But over a few weeks I find that they go from crispy to leathery even though they are tightly sealed. I don't have money to buy oxygen absorbers or silica packs. Can you give me some tips for long term storage of these items? Will a jar sealer for my food saver solve this problem? Thank you in advance.

That's what I will do with my beets& carrots& potatoes this year. Can you dehydrate broccoli & cauliflower too.
Broccoli and Cauliflower are better blanched and frozen..you would have to slice it awful tin..blanch it and you would get a lot of mushiness in reconstituting!

Also, how do you re-hydrate for soup? I usually sautee my "trifecta" before adding the stock and other ingredients....could I just throw it in with the carrots & onions?
