Dehydrating and Freeze Drying Celery for Powdering

  • Whether you own a dehydrator, a freeze dryer, or both, it is so easy to dry celery and then use your blender to turn it into powder. Having a selection of vegetable powders on hand makes very good sense and adds an additional layer of choice to many recipes..

    I'm a new viewer and subscriber. Tell me, how long will dehydrated food generally last? And what is the best way to store it? I'm new to pepping etc. I enjoy your professional and scientific approach to food storage and security. You're the last of a dying breed, Mrs. You would have made an excellent home economics teacher/instructor. Or a county extension officer. Keep the great video's coming. We need you ;)

      Thank you so much! Next to within the walls of my own home, I think I do my favorite and best work in a classroom--I love to teach. My field is science, so it stretches across many disciplines. Dehydrated food keeps a good year or two and I have even opened some that was four years old and it was still good. Thanks for your comments.

    Dear Pam- I cannot truly express how Thankful I am to have discovered your channel…after much research, I just ordered a new box type dehydrator and have been searching online for dehydrating tips & safety advice…Wow…UA-cam is overwhelming with info- but, what is fact and what is only opinion? Thankfully one of the comments on a channel said to visit your channel for honest & factual food storage information…oh my goodness…what a relief to find you…I am now on a RoseRed Homestead Marathon of watching & taking notes daily! Your channel offers the EXACT type of food preservation info that people desperately need- especially our younger generations who are learning on their own for the first time.I was blessed to have learned canning & preserving in my beloved Grandma’s kitchen, but now I have a smaller space for food storage- so I want to dehydrate and next to invest in a freeze dryer( I loved seeing that you can vacuum seal inside your freeze dryer!!!!) You are a breath of fresh air…I mean fresh facts!!!!! Thank you ❤️

    Don't you love having a 'Jim' to help you around the house! I have a "Jim" too, and he is my knight in shining armor and loves all the learning I am getting from watching you with food preservation. We just bought a farm and will hopefully have our garden up in the next 1.5 years. (I am a Ph.D., too, in Adult Education).

    Yes, the Vitamix canisters are expensive but I'm sure you'll be so happy you purchased the canister for dry food. Especially since you will be dehydrating and freeze drying. The motor itself will last for a very long time. Keep the videos coming, we love them!

    Thank you for sharing. Loved the ending blooper and the laughter! White vinegar is my go to for removing stains from appliances (electric kettle, blender, food processor, Keurig), newly stained clothing (if already dried in dryer the stain is set) and soaking toilets overnight. If your blender container is still stained add 1/4 cup white vinegar, run the machine then let it sit, run again a few times and stain should disappear. As long as hot ingredient didn't set the stain it should disappear. ~ K

    Pam, you are always such a inspiration. You inspire me every time i watch you, to do new things and that we can even be more independent at any age. We don't have farm animals but we can still grow and harvest fruits and vegis here and James hunts which most years supplies us in meat. I am so happy i have found your channel this past year, Thank you to you both.

    I used tomato powder to make a sauce for tortellini today. Vegetable powders would be good for pasta making too.

    I love celery powder that I grow in my garden in my foods. You need to let the Vitamix container sit a while before opening the lid to let the dust settle first…. And use a food grade brush to get it all out of the container. You don’t want lose any of your hard work. I use celery powder in lots of things.

      Sure… I’m about to do a UA-cam video on my vegetable powders in my pantry for my channel. I love celery powder in chicken dishes especially chicken salad. You can make a rue, add celery powder for cream of celery soup then add that to a dish that calls for it.

    I chop my celery fine in a processor, no blanching, and then dehydrate. Powders easily, and can also be reconstituted overnight in the fridge to use in salads.

    I'm not sure what site I was one to find this information. If you place a piece of plastic wrap on the top of the jar, before putting on the lid, the lid does not get covered with the powder. It saves the powder and the cleaning. I was really happy to be informed of this trick.

    Oops! Just realized that my new Kelvin is a medium. When my husband bought it they could not sell him a small one. So now I am back to square one on calculating quantities per batch. He said the 5 trays in mine holds 1.5X the vol. of yours. We shall see.

    If you put a piece of plastic wrap on the top and then the lid before grinding you won’t get powder sticking to the inside of the lid, also helps with the dust in the air.

    Hint, put a piece of plastic film over the container before you put the lid on. Saves on clean up, keeps the lid clean....

    I dehydrate most things in my garage, to keep smell out of the house. I've had celery going for 12 hrs and it's not looking great...Guess I should expect that when we have 80% humidity and a tropical storm on the way (central florida). I'll bring it in in the morning, if it's not done. Planning on doing beef jerky this week, guess the house will stink for a day. We do have a UV light system in the ac that removes odors.

      @@RoseRedHomestead Storm was very mild, we get stronger summer thunderstorms with more rainfall. Mostly media hype.
      I did bring the celery inside the next morning and it was done in 4ish hours. Only a few large pieces didn't dry. My dogs enjoyed them.

    Love all your videos as they are informative and you are quite the presentress :-) most of the books talk about dehydrating vegetables anywhere from 105 to 135°F. I was pleasantly surprised to hear that you dehydrate your onions add 150° which I did and it made the process go much faster for me. Do you dehydrate everything at 150°? I next going to try dehydrating spinach and I’m wondering whether you do that at 150° as well. It might be helpful to your viewers if you indicate the temperature that you were going to dehydrate your foods at in your videos even though we do not see you dehydrate them. I know I would appreciate it. I learn a lot from you and thank you again.

      People sometimes make a big fuss about what the "right" temperature is when dehydrating food. I am not so fussy. Most of my dehydrating is done at about 150F.

    Ms. Rose, in your intro video, you show something you have canned, and it looks delicious. There is what looks to be an orange slice up against the side of the jar. Would you mind telling me what that is and do you have a recipe or video for that item? Thank you!

      Thank you so much. I dehydrate lemon slices and once in awhile when I make a batch of soup to pressure can, I slip a lemon slice into the outside edge of the jar for esthetics. That is our chicken soup, and we hav a video on that.

    I have a new "Kelvin" like yours. Where can I find a guideline for how much vegetable to put in each batch? First I want to do raw eggs, then onions, then carrots. I have looked on line but nobody has a table of weights per batch - or anything like that. Any suggestions?

    I found the color difference very interesting. The freeze dryer color is more true to the color of fresh celery. Which says to me, it retained more nutrients than the dehydrated version. More evidence that the 1st food preservation tool I need is a freeze dryer. Thank you so much for this video!

    I have herbs dehydrating right at this moment... I do have celery in my garden, maybe I should go get some of it to dehydrate...herbs are at 105 degree. I'm sure celery could go for 105, don't you ??

    Hi Pam... Watching this video, I didn't hear you mention that you blanched the celery. Being new to doing celery, I hope you don't mind me asking if your celery was blanched. This is probably something everybody knows to do. Thanks for your help, Bob

      I don't mind at all! I did not blanch it, but you certainly could. You would be surprised to learn that most people think everyone but themselves know things, when the reality is that lots of people don't know it at all. In addition, there are often several ways to do things. I know some people blanch celery and some don't. I blanch a lot of veggies, but I don't with celery and I can't even tell you why--just the way I've always done it!

      I was wondering that too. Some veggies are yes and some are no and I have not cracked the code yet. When freeze dried carrots for powder would we blanch or cook to tender?

      @@grandmatuesday1184 I processed mine raw without blanching at all and they turned out fine. However, they were whitish on the outside. I will try blanching them next time before freeze drying in hopes of better color.

Potatoes are in the freeze dryer now and picking up broccoli and carrots tomorrow after work for the next batch. I am super excited about trying the broccoli cheese and the tomato celery. My tomatoes are not turning red yet but it should be ready soon. I also think i am going to add chucks of broccoli withe the broccoli cheddar just to get away from the baby food/soup crossover so its clearly soup.     I dont have a freeze dryer and I am wondering if its cost effective since that ran for 24 hours vs the dehydrator that ran for 10. As always a great comparison. I love to dehydrate veggy's..I save half dry and powder the other half. Cant wait for the how you use them video.

      My dehydrator does take less time, but uses MUCH more electricity - depends on which D.H. you have. Also, much more nutrition is lost in the D.H. The freeze dryer keeps the nutrition. My health is fragile and I can't afford to give up any nutrition - as you age, you are not able to extract as much nutrition out of your food.
      Also the color of my F.D. celery is beautiful and looks like celery. When I D. H. it looks dark and pitiful.
      That said, I prefer some things dehydrated! Not putting onions in the f.d. in the house - so out on the porch in the D.H. and to my taste buds -- I much prefer d.h. cinnamon apple slices. And, it is great for frozen hash browns and peas and carrots. Have to tell you that the f.d. is worth every dime - if you want to talk to them about money saving,(it is HUGE) over buying it - you can see it is worth every dime and I even paid the extra for the oil less pump because I am disabled and changing the oil was difficult for me.
      ALSO: the f.d. food properly packaged is good for 25+ years - D.H. a few years depending on what it is.

      Lots have people have done power comparisons and the freeze dryer generally consts less than $2.00 per batch, so it isn't too bad. Actually, we don't care about that because more important to us is to get a good supply of food preserved and stored--we are aiming for a year's supply.

      I just read a study that compared the various food preservation methods and the amount of nutrition that is lost. Freeze drying does preserve the most, but dehydrating is not far behind. Regular freezing and heat-based canning are lower. However, I like a variety of ways to do things, and some food value is better than no food value!

      It is an attachment made by Food Saver and I rigged it to work on my NutriChef vacuum sealer.

    Have you been able to determine how expensive it is to use the freeze dryer for a single batch of food? I've heard that it is expensive to use, in addition to the cost of the freeze dryer.

      I know lots of people are concerned with that, but frankly, we don't care. For us, it is worth every penny to have an additional option for preserving food, and one that preserves most of the food value. I have watched others who have calculated the cost at around $2-$3 per load and most loads run over 24 hours, so I don't think that is too bad.

    I don't have a Vitamix or Ninja. My question is How fine is your powder? Is it like flour? Smooth all the way through? Or are there some bits that are larger, like cornmeal? Thank you for all you do!!

    It must have cost you a small fortune to make that little bit of powder, is it really worth it if you do a cost comparison. Amazing how it powders down to next to nothing. I love to dehydrate, but I hate the noise the machine makes. Nice comparison between the two, love how the color holds on the freeze dried one.

      If you check the ingredients on most powdered veggies, they add extra preservatives, etc., so the cost to me is not the most important consideration. Our dehydrator isn't too noisy, thankfully, but I know that some of them are. And I agree about the color of the FD ones.

    Do you blanch celery? On another channel it was said that without blanching the celery stayed tough when cooking with it.

    Question: Both processes drive off the water. So, if the weight of the celery was the same for each process, (I know it wasn't), the remaining solid ingredients should be practically equal, correct?

      If you mean why is it that the dehydrated celery looks so much less voluminous than the freeze dried it's because of the processing. When something is dehydrated the the cells more or less collapse or shrink as the water evaporates, but in freeze drying the water is sublimated (the water goes from its solid state, ice, directly to its gaseous state, vapor) which leaves the cell structure in tact. If the ice had to melt into water before it could be burned off as vapor then the cells would collapse similarly to dehydrating. I hope that helps.

      Your thinking is right on! If you recorded the mass (in grams) of both batches before and after then calculated the percent reduction for each batch, the percentages would be pretty close to each other. We strive to remove a minimum of 90% of the water. The FD may remove just a bit more. I will have to try this sometime!

    I was wondering if you have freeze dried garlic and did it make you machine smell? we did a batch of garlic and our machine smells really bad, we have used a mild Clorox solution and vinegar to clean it out and we still smell the garlic, and are afraid the next food we try to freeze dry will smell like garlic. Do you have any suggestions?

    I've always called the whole multi-rib celery bunches you get at the store a "stalk" and each individual "spear" I call a "rib." |
    Anyway, in general, and all things (coughpricecough) out of consideration, which method for drying is better, dehydrating or freeze drying? Just curious.

      I don't blanch celery at all. Maybe I should. Next time I will try that to see if it makes a difference. It all came out fine.

      If it develops too much chlorophyll it can turn bitter. It should be a whitish green rather than a dark green.
