      So very true... I used to be terrified of, watching Miss Pam, started watching in late 21... And because of her teaching are teaching us what to do teaching me what to do, I am no longer terrified and I'm fact I talked to my friend, and she asked questions and I can answer the question because I was watching the Miss Pam...

      I know I'm a bit late to this video.. I have a question. All I have is a few older dehydrators. Are they OK to use? I think they're from the 80's and 90's. I'm loving all your videos and learning so much!

    As you were listing meals that are made better by the addition of celery salt, I thought of the one thing that all Chicagoans know: sprinkling celery seed or celery salt on top of a hot dog is like icing on a cake ( that hot dog would be in a bun with mustard, pickle relish, diced onions, tomatoes, +/- sport peppers). There are few things on earth that taste better!

    I made mine without any salt just the celery itself, it was salty and I'm a salty person.. I love salt, I just love everything with salt, I don't like sweets. Thank you love all your videos I've learn so much.

    I love the leaves!!! I heard a cook one day on tv years ago saying never to eat the leaves. Never watched him again..Love your channel and thank you so much for sharing your knowledge with the world. Blessings to you and your family.

    I am waiting for the peppers and onions in my dehydrator to get done and then I will blanch (w/baking soda) all the celery and leaves I sliced up this morning and put them in the dehydrator. I have done so many things in just the 4 weeks I've had my dehydrator, including all the frozen veggies from my freezer, Rotel, Picante sauce, carmelized onions, fast beans and so much more. Thank you so much for sharing all your knowledge with us!

    I have been binge watching your videos and love everyone of them. You are such a great teacher and Jim is a great cameraman. I used to put up purple hull peas in my freezer, back when my late husband had gardens. After I blanched them and I put them in cold water with ice, I would pour them out onto a white sheet that had towels under the sheet to absorb the water. The sheet made it easier to scrape the peas into my measuring cup, or just scoop them up with my hands and then put them into a measuring cup.
    It was harder for me to use just a towel.
    I have learned so much from your videos. I had been watching other people’s video’s until I discovered yours. Now I am not sure whether to trust some of the others or not, after hearing you explain things in such detail.

    Only yesterday I was looking through pages of spices etc incl celery seeds with an attached attached recipie for celery seed sea salt on an online UK dried foods company and today I saw your video on dehydrating celery and making celery seed sea salt.     I prefer the celery leaves over the stalks, even in salads. Our grocery stores cut off most of the leaves and people then cut off the rest at home - and they are all thrown away as garbage. Whereas to me they are pure gold. I get free celery leave by calling the store a day ahead before I go for groceries and the save me a full shopping bag of leaves, ready for me to pick up when I arrive. I don't understand the public distaste for celery leaves.

    I followed your directions and dehydrated ONE small stalk of celery and leaves in my Nesco dehydrator. It ended up so tiny, it was about 1/4 cup. I gave a few leaves to my dog and she loved them! LOVE your canning and dehydrating vids. The science you put behind into your vids is exactly what I appreciate. You have given me confidence that I am canning & dehydrating safely. Thank you!

    There is a plant called “Lovage” or commonly called “poor man’s celery”. The whole plant is edible and is very easy to grow.❤️

    Thank you for this series. Learning so much. A hint on how to avoid cutting yourself with a knife. When chopping, angle the sharp edge slightly away from yourself. If anything were to touch you, it will be the top edge of the knife. Hope this helps you.

    In tuna salad,( I hate all fish) I use fresh celery,celery salt and celery seed. I love it and it covers the taste of fish

    Good afternoon! I so much enjoyed this. I first watched your basics video, then jumped over to this one. I have learned to grow my own celery and wanted to learn "how to" make the salt. I also have a Vitamix and truly love it. Actually have two..mine and my mother in law's. She and I used to have more fun discussing what we made today in our Vitamix. She had one of the very first ones, stainless steel, but still works great. She was 95 when she passed. Am so excited to make my own celery salt now. Thank you.

    I use my salad spinner to get rid of the excess water after blanching. I set the basket in the sink of cold water like you do up to an inch from the top of the salad spinner inner basket then drain the water a bit then spin out the water. I do this for lots of other veg too.

    Still getting cheap Wisconsin grown celery so now I'm up to 6 bunches, batch 2 drying now. Maybe they are growing them in hoop houses.... I wish I could go see it for myselt. I never had any luck growing celery in this part of the country. Thank you again for the inspiration 😍

    I ran out of celery salt, I had quite a bit from a sale a while back and I had stocked up, and so went to the store and WOW!! sticker shock!!! I cannot believe how expensive celery salt has gotten!! So thank you for this video because from now on I will just make my own! 😉... And thank you for all your videos. I have learned a lot from you and regard you as a trusted reference. When I hear of some technique on other videos, I always look into your collection of videos to see what you have to say about it before I trust it. I believe it was the dry canning discussion you had that cinched it for me. I said to myself, Rose is scientific, methodical, and sensible. A good trusted source.     I followed your directions on dehydrating celery. Worked very well. Will have to do more to have some to powder though. I only got about a cup of dehydrated celery from 3 bunches! A few days ago I made spinach powder. It is beautiful! But again I could see why you say these powders are like gold. A shoe box sized container of celery from the grocer only made about a scant 1/2 cup of powder. You are inspiring. Thank you for all your instruction. I really have been enjoying your video presentations.

    Another great video!
    I dried some left over celery a few months ago without blanching it. It was my first time drying celery. The pieces were like Little Rock’s, but eventually rehydrated in a long cooking crock pot stew. I will definitely try blanching now. I love celery salt but I bet fresh is even better, so will try this too. Thank you for sharing your wisdom with us!

      You can use the sun if you live in a non-humid area and I have mentioned that in a number of videos. If your oven goes to a very low temperature, that works as well. We have a book on dehydrating and I mention several alternatives there.

      I am in South Houston and it’s very humid here, but my oven does go down to 120° I’m gonna have to try it. I just love your episode on the celery.
      We all need to be preparing, as you know our country and the world is in turmoil, and we never know what’s going to hit us next. I just keep praying.

      I watched the video twice and could not find where she said to use baking soda in the blanching water, could could you tell me how much to use, and do we use it on things other than celery also

      @@tennesseeterri use just a small amount (like 1 tsp) on any vegetable that you want to retain the color! It is amazing!

    I just adore you! I get so inspired by your well made, informative videos. I borrowed my daughters dehydrator and started celery yesterday. It's so crispy! I'm not one to run to the grocery store every time I run out of something and celery is a must have so this is a great solution. I bought 3 bunches last week at 69 cents each and now I wish I had bought more! I'm in Wisconsin and the celery was Wisconsin grown too. We are starting to get frost so not sure how much more celery will come from the badger state😎

      Had to check your date. Celery at our grocery store is 1.99 for a regular stalk. More for organic! And your post is only a year old. Inflation for sure!

    Pam, I've discovered dried celery in canned veggies soup keeps a lot better texture than using fresh. So before I dehydrate more celery I will make a new batch of veggie soup and use up what I have on hand. Probably the dried onions I have too.

    If you grow your own celery, when ready to harvest cut all the stems off just above ground level. Do not pull up the roots. It will grow again and you can harvest another crop before it goes to seed.

      @@deesjourney1 keep an eye on it for bolting and harvest before then. There will be a difference in the inner stalks and leaves
