- For Seafood Lovers, this is for you. Seared large Scallops into pre char stage for tasty. Combine with Asparagus tip & other mix tasty veggies. Stir fry with delicious hoisin sauce. Enjoy.

16 oz. scallops, ( large size you can find )
5 oz. asparagus tips
as needed, cooking oil
1 Tbs. ginger, minced
1 Tbs. garlic, minced
3 oz. portobello mushrooms, sliced
2 oz. carrot strips
2 Tbs. rice wine, for drizzling
** premix sauce **
1 Tbs. hoisin sauce
2 Tbs. rice wine
1 Tbs. sesame oil
½ tsp. sugar
⅛ tsp. white pepper
** slurry mix **
½ tsp. corn starch
2 Tbs. water
** for garnishing **

Oh Chef. This dish looks delicious. I would try this. Are the scallops frozen? If so, do you thaw them out prior to use? Last week and the week before, I made a coated chicken stir fry. They loved it so much, they want another so this Sunday I'll work on another batch. Just need to see what in terms of vegetables. Still busy "wok"king. It's my woks of life. I hope sometime this month, I'll head to Centra for some Chinese food shopping. Until next time Chef.
Those scallops are free from Seattle Pike Place Market. But they are also available in frozen stage. Then need to thaw then cook immediately to be safe. Your coated chicken stir fry , must be so tasty, that they want more, LOL.. Thanks for watching.
I have to wait for scallop season here July - September so I can get them free. We're allowed one 5 gallon bucket a day...

By the way chef, how do you keep your cast iron pan looking so well seasoned? It's the best non-stick pan when it's seasoned right.
I do! just wash it with dish washing detergent. Then paper towel it to helps dry up fast. Then coat with cooking oil. Stored up side down. Thank you so much for watching.
