As Max said, pastrami is smoked and corn beef boil/steamed. There's also a third version of cured beef that is allowed to dry-cure. It's called bresaola, and Max should make some.

You should really talk more about how to use the curing salt. That ish can be dangerous if not used properly.
I'm almost 100% certain that was a farmed salmon. If you want a truly beautiful fish with amazing marbling, try a spring run wild chinook.

I make Venison Pastrami. I do it the same way you did the Picanha. Medium Rare. Best way to do a venison roast.

I was at his house and we was playing Mario Kart, and I don't know if he has a wife but his wife came home (maybe it was his sister) and caught me in the kitchen fixing a plate of the things Max cooked for the video he was making at the time, and she wonder who I was Max told her and then we all sat down and ate. After eating we continue playing Mario Kart I lost and then I woke up, someone else was there but I can't remember who, even Tibby was there.
