    One of the things I really enjoy about your videos is how you explain the anatomy of the animal to help explain the cuts of meat. It’s something I’ve never seen/had explained to me and you perfectly summarize where cuts are located, use cases for them, and how to clean them. Also the camera work and editing the last year has been stellar, great work Max & Sophia!

    I have to say, the Editing, the HumoR and the also the information you provide about the cuts, are so you unique to your videos and it's quite amazing!

    The powders are dried out ingredients so they'd act as dessicsnnts (sucking the moisture off anything so they can rehydrate themself).

    As someone who works in a grocery store meat department, the work down of the chuck roll was amazing, the chuck eye is my favorite, as is to my cutters, thats why i always ask for one before they cut one

    Do it like how you would do salt baked fish or chicken; mix egg whites with the powder and create a batter to cover the meat up.

    What did you do with the shells? I think they may do well in a beef stock for sauces or deglaze for veggies in a stew like a condensed base.

      I have! My favorite flavor combination is olive oil, balsamic vinegar, garlic and rosemary. Also cumin sometimes. A good base for a marinade!

    Pray for me my brothers. I have decided to do a fast from all things beef for new years. I have survived 1 month so far. No burgers, no steak, no brisket, no ribs. Its been a struggle maybe i cheated a bit by ordering bison but i am technically still winning.
    For each month i survive i will replicate 1 recipe from a steak house chef as a reward. This is #1 on my list so far.

    Many people around me still wrap the neat in aluminum then wrap the aluminum in clay mud as the shell for cooking

    when you think about it all you really did was made a salt-baked crust using the Umami powder since you have salt in umami powder you add a little water and poof flavor salt-baked

    Loved this video. Chuck roast can be very delicious if cooked properly. I do have a question. So, I thought the other test was to determine if the seasoning wrap added more flavor. Wouldn't the results be affected by seasoning them before they went into the smoker. Or am I wrong?
