    Can you use coconut sugar? Trying to do an unrefined version.

    I've made this a few times and it crystallizes sometimes in the fridge 🤦I feel like I make it the same way every time

      It's likely cooking for too long, I'd recommend reducing the amount of time.

      @@ForkintheKitchen it was a really light caramel color... lighter than the one in your video 🫤

      Maybe not enough water? This is 3/4 sugar and 1/2 cup of water. The first half cup of water gets completely evaporated. Since you’re adding the second half cup into hot caramel it evaporates some more so the ratio is even more off. Simple syrup is half sugar half water but this recipe really messes up that ratio.
