Hearty and Creamy White Bean Chili (Vegetarian)

▢ 2-3 Tablespoons extra virgin olive oil
▢ 2 cups yellow onion (1 medium), finely diced
▢ 1 jalapeno, seeds removed, finely diced
▢ 1 bell pepper, finely diced
▢ 30 ounces cannellini beans (2 cans), drained and rinsed
▢ 15 ounces navy beans (1 can), drained and rinsed
▢ 4-5 cloves garlic, minced
▢ 2 teaspoons cumin

Good and easy recipe. Question though >> why do you need vinegar in this recipe? What does it change and why shout it be there ? Vinegar has strong acid effect and I don’t get why it is needed in stir fry sauce . Honestly.

Thanks for sharing this recipe, I really don’t like using canned soups due to the insane amount of sodium in therm which my kidneys can’t handle. Have you tried making it with oat milk or other plant based milk substitute?’ I’m curious how it would turn out using oat milk. 🌻
I haven't but I've had another reader comment that they used unsweetened almond milk with success, so I'd guess oat milk would too. I like to use canned coconut milk in soups instead of cream, which I think could be a good option too! Would love to hear if you give it a try!

Unfortunately, I don't. You might be able to substitute with your favorite sugar free sweetener like Splenda, or try monk fruit sweetener. I'd love to know if you give it a try!

Hi! You could, but you'll have to cook them longer to ensure the interior becomes tender. It is a different cooking process but if you're comfortable have a go at it.

I recommend checking the date on the half and half you use; usually they recommend 7-10 days once opened, so I follow that.

The recipe I waas looking this up for is a stew, and it says to finely dice. So.... you would cut them this way for soups/stews I guess.
