    I was willed my Grammy's cast iron pan from the early 1900's. I was not a great cook, but the moment that pan came into my life and I used it for the first time, I swear, it was like all the spirits of my ancestors came out and gifted me their cooking talents because my cooking blossomed so much!

    I want to first say that I love my wife. She is smart, funny, beautiful, and driven. She's an amazing mother to our 4 year old son. She is also the destroyer of all things cast iron. I can't tell you how many times I caught her with a scouring pad and trying to get the "black stuff" off. I'll forward this link to her, hopefully she won't see my comment.     Just wanted to say that you can use some soap on the cast iron to clean it. back in the day soap contained lye, which is not common anymore, and that was the main chemical the stripped away the seasoning. interestingly lye and electrodes are used to clean and restore very old cast iron. so if youre using dawn or something like that its totally fine to use it and a lot less harmful on the seasoning than scrubbing too hard with a metal brush

      That is completly true what you say. Ariel mentioned that they make soap themselves so i don't know if any lye is involved into that. Personally I prefer to not use soap when not needed but i do sometimes. Just some people take it that 'you can use soap' means you can just deal with it as normal dishes or even stick it in the dishwasher

    Great video! I have a very old, small cast iron skillet that belonged to my mom- very sentimental. Everyone in my family has cooked with this particular skillet. My partner thought he would clean it up one day... Oh man I thought he ruined it! I was devastated and cried to my sisters (we all wanted this skillet when mom passed). It was rusty and stripped! Still extremely upset, I came home the next day to a smoked out house, smoke detector sitting unplugged. I have to admit I wasn't nice about the situation at all. On the third day, he brought me this shiny, like-new cast iron skillet and apologized saying he wanted to surprise me with it but it took longer than he thought. He endured my hysterics for a couple of days, still finished it and presented it to me like the shiny, loving gift it was! It humbled me and taught me a huge life lesson: A little patience, maintenance and care can reinvigorate, giving new life to such a sentimentally valuable item- whether it's an old skillet or an old relationship. Love you two!

    The only thing I do different is I turn mine upside down in the oven to reduce the oil pooling in the bottom. I have to say that the more I watch y'alls videos, the more impressed I am by your knowledge and abilities. Keep the videos coming!

    I inherited my maternal Grandma’s cast iron skillet. It’s a 8” I believe. Mine is almost 100 years old, it is a thicker one more like the one he called the Birmingham. My Grandma was born in 1878 and she died when I was about 11 years old. She was my best friend, I spent a lot of time when I was a little girl because my Mama had 2 miscarriages and a stillbirth between Me and my Brother who was born when I was 10. Back then you spent time in the hospital, so I’d stay with Grandma. Her house burned down when I was about 7, we were picking thru the ashes and I found the cast iron skillet. It makes the absolute best southern cornbread. You get a nice outer crunchy crust.

    We have a cast iron pan that we call “Granny’s Pan”! We got the pan when my husband’s Granny passed away & I think of her every time we use it. The pan is actually Granny’s mother’s pan so it is older than me & my husband but it is the best pan we have & the easiest to clean.
    After getting Granny’s Pan, we expanded our cast iron collection & had to build a special cabinet to hold them all.

    My husband worked at the University of Fairbanks for 2 years. We traveled all over Alaska, which is the most beautiful and stunning state in the USA! Loved every second of it.

    Someone threw 3 cast iron pans away at my apartment because they were rusty. Took me all of half a day to get them back to useable. I hope someone does that again.

      Not quite the same thing but this reminds me of finding a crockpot at a flea market for all of $1 in New York City. Someone was too lazy to clean it after cooking in it. It made me very happy indeed! 😊

    In our home step one to cooking a steak in the cast iron pan is removing the smoke defector from ceiling 😄 Thank you for the tips, many noted!

      Yes. I do the same when seasoning a new or old re-seasoning of cast iron or carbon steel pans. I don't remove the smoke alarm, instead I open doors and windows and turn on
      every fan in the house.

    Cast iron is seriously the way to do... the original non stick and almost indestructible. I’ve got a griddle/grill, a large 12” pan, and a DO... I use them for almost everything. It cooks better than anything else. I love my CI!!
    Edit to add: I wash my CI with soap all the time... like almost every time I use them... just don’t soak them and it’s fine... a quick wash with hot water and soap, rinse well... dry very well and oil before putting it away. I’ve used CI all my life and haven’t had any issues with it.

    I have an assortment of cast iron - seasoned and enamels - some over 100 years old, others only months old. All are great to cook on and will last a dozen lifetimes if well cared for. You don't have to pay a fortune for quality cast iron cooking.

    I had a hugh collection of cast iron and when we downsized our 5 children were thrilled. They got to choose the ones they wanted. I kept my 10", 8", 6qt Dutch oven. Don't let anyone tell you not to cook acidic foods in them, you just have to clean good and oil heat and ready for next time. Only thing I use to season with is lard. I get the good lard from our butcher shop now but used to do my own.

    I clean my cast iron with a little water and kosher salt when food needs removed. I've never used soap. I also coat it with a little oil....wipe any excess after cools. I call my Griswold cast iron skillet "black beauty". Don't use it much anymore...but wouldn't part with it...Cindy

    Hot tip from my southern Grandmother... when your eggs or anything you're cooking sticks to the pan, remove the pan from the heat and let it sit a minute. Works every time to allow the food to release itself from the bottom.

    If you need to clean the crud off an old pan, I found that running it through a cycle in a self cleaning oven works great. Anything stuck on the pan turns to a fine powder and the pan ends up a bare metal gray.

    When I moved from Louisiana, I gave my sister all my cast iron. After moving, I found a 10 inch skillet for $5. I ended up having to use a lye and water method. It brought the skillet back to bare metal. I seasoned it with vegetable oil in the oven. I use it mainly for biscuits and cornbread. The lye and water solution is the best method if you don’t have a fire place. I never use soap on mine either. Cast iron is the best. I will definitely be re-adding to my collection. Thank you for showing people unfamiliar with cleaning and maintaining cast iron. Cast iron just seems to make food taste better.

    I only cook with cast iron pans. Like you, I have my 2 go to pans. One point if I may....never run a hot cast iron pan under cold water, it will crack it. Also Griswold pans are treasured....nice find, Wagner pans are another collector piece.

      Exactly! I was taught that you never put water into cast iron ever, as you are removing the seasoning which builds up with use and this what makes it cook as it does, Love the things you and your wife do, but never, ever put water on cast iron, ever! !You clean them by simply wiping them out after use and wipe the inside of them with your seasoning oil of choice!

    Thank you two and the animals, I get to live my Alaska dream through you. I bought 20 acres near Homer on the Anchor River and will be building next summer. Hint: a tbsp of salt with the smoke process while seasoning the cast iron pans-rub it in. An egg will slide like ice-

      What type of salt - regular salt, sea salt, kosher salt, rock -since the salts have diff textures. Is one better than the other. Thxs

      Don't ever throw cast iron away cause you think you ruined it. It's extremely hard to ruin cast iron to the point of no return. There really easy to restore.

    Your Griswold pan is a treasure, and really sought after by collectors. PS the Number 6 Griswold is the perfect size pan for Cornbread for two.

      @@truneilson no it is not recommended. Fire, or wire wheels or sandblasting are considered destructive methods in most reputable cast iron collector groups/forums, and are definitely not recommended. (And will get you booted out of said groups if you even recommend those methods to anyone) Not only that, but what could be a collectible and valuable piece just had its value severely diminished.
      Soaking them in a lye bath, or using yellow-capped oven cleaner IS a recommended and safe method to strip old seasoning.

      Me too. I tried seasoning an old cast iron pan I was gifted this summer, but didn't repeat the process enough, I guess. Rust or iron or something made me sick after eating the food I made. Maybe I'll do it your way and try again. I think I used soap.

      I feel the same way. I started to call my mother and ask her how to season them but couldn't....I buried her 5 months ago today. I did bring her cast iron home with me but I need to be reminded how to season and clean them. Thank you for sharing this video.

      Cast iron people do not recommend removing seasoning in a fire as you don't control how hot it gets and you can warp the cooking surface, just heat in your owen (with windows open).

    Every time you fry eggs I think of something my mother used to say. She liked her eggs fried all the way through. If I made them the way you do, she would say "Son, you are supposed to eat your eggs, not drink them".

    Thank-you, thank-you!! My husband just started using 3 very old cast iron skillets that need to be cleaned up and reseasoned. The bottoms are so thick the only thing visible on one is Lodge and one has a U. I look forward to cleaning them up then reseasoning to cook our venison, elk, salmon and chicken plus breakfast meals.     I used to subscribe to the "never wash with soapy water" theory for years, but I now wash them in soap and never have an issue. It's a long battled debate amongst cast iron cookers lol.

      It was something about what soap used to be made out of. It would strip off the seasoning, but soap doesn't contain the chemical anymore... or something like that anyway.
      I don't use soap, even though I know it probably fine.

      ​@@DevinAK49 I believe the compound you are describing is sodium hydroxide, or lye. You are correct, most dish detergents do not contain lye. I clean my cast iron with dish detergent and never worry about it stripping away the polymerized oils. I think every user of cast iron somehow falls into his or her own routine and cleans and seasons cast iron a different way.

    Great video! When performing the initial seasoning to cast iron in the oven, I put pots and pans in upside down to prevent pooling on the cooking surface. Also, some aluminum foil on the bottom of the oven aids in clean-up. Great job!

    Haven’t followed this page a week yet and you’ve solved my cast iron pan problem. Mine was gunned up and I couldn’t get it back down to bare metal no matter what I did then here you come putting it in the wood stove. I put mine on my grill at 650 degrees for an hour and was able to clean it up and start the seasoning process over. Thanks bro!!!

    Always look forward to your videos. I don’t want to be that guy that tells you what to do so I will let you know what I do. After washing a pan after stripping, you’ll notice when drying before seasoning that flash rust occurs. I could see it on your amazing Griswold. Once you reseason your pan you are seasoning over the rust. What I do is while the pan is still wet after cleaning is to spray it with Pam or similar product. This prevents the flash rust. Seems counterintuitive to put oil on a wet pan but it does prevent flash rust.

      Don't use canned spray there's stuff in there you don't really want to eat, albeit in minute quantities. I have a glass spritzer I fill with (usually) olive oil.

    Good job on the cast iron expose! I would add that it's important not to hit hot cast iron with cold water. I did it for years with no incident and everybody said "you shouldn't do that it can crack them" and I scoffed. Until it finally happened, and I busted a pan lol. My mom has cast iron that is probably almost a hundred years old, and it still sits on the stove and is used daily. My mom would bring our cast iron with us when we went camping about 1x yearly and not only did we cook in them while camping but she also put them into the fire to burn off the carbon that accumulated throughout the year. Hers and mine still always have bumpy coat around the outside.

    I love my cast iron skillets! I inherted mine from my Grandma... I believe they are older than I am (51) and she used them every day. I love them for so many reasons.

    I love mine, they never leave the top of my stove. I have room in the "draw" in my stove, but I use them so much they rarely go down there. Best cookware EVER!

    I have seen many videos about this subject, but I have never seen somebody cleaning a tea kettle and later seasoning it, so all the experts are doing things that I already know!

    LOVE cast iron! I have a Dutch oven & 2 skillets of different sizes that I found outside at an old house. They are rusty like crazy. Saw videos where pans like these were soaked in vinegar until the rusty stuff all came off and then they were cleaned and seasoned just like you did. I'm going to give it a try. Video well done & educational. Thanks for sharing!!

    At 78 years old we have gone full circle . Weave probably paid enough for pots pots and pans over the years we could have taken a trip around the world and now we have had enough of peeling none stick coating that do nothing but slip away into our stomachs or down the drain with the wash water they are nothing more than failed experiments in frustration . Now we are back with grandma's and grandpa's cast iron and there is No other better cook wear in the world. happy Trails you two.

    Just found a great buy on an old Lodge skillet. It definitely needed to be reseasoned and I remembered your video on that process. So appreciative you did this for me to follow. My can't iron skillets that my mom had are so very well seasoned I love them. Thanks again.

    We still have our Dutch Oven from my GG Grandfather Samuel and his wife Sarah. Tradition had it they purchased in Missouri shortly after their marriage in Missouri in 1849, traveled to California (as part of Clark-Skidmore Company. in 1852) , crossing the Senora Pass, settled in Senora County California. We still use it and it works wonderfully! about 170 years old. Show me a Teflon pan that would still be functional after 170 years.

    That's how I got my cast iron, on the curb by the trash. Cleaned um up, reseasoned them. NOTHING BETTER THAN CORN BREAD COOKED IN A CAST IRON. Good video, you explained it well, especially for those that are afraid...intimidated by using cast iron. Just maintain, then easy peasy. THEY WILL OUTLAST ANY OTHER PANS YOU HAVE. MY great grandchildren will be using mine.

    I still have my great grandmothers dutch oven that's around a hundred years old. I enjoy cooking with my 8,10, and 12 inch skillets as well. I've also been enjoying my 12" 5/8 Mafter carbon steel french pan. Nice video :-)

      Yes. I I have the same one plus the 9". Use them as often as my cast iron. Love 'em. Different properties and both have their place.

    Hi, Eric and Ariel. Thank you very much for this instructional video. I can tell this was a labor of love for you both. I cherish all of our cast iron skillets we’ve inherited. I hear you regarding how much room they take! We have a setup like yours in which my husband had installed lengths of wood to which he installed screws from which we hang our plethora of skillets. I will say this and I hope you don’t get mad at me, but Lodge has a 14” cast iron wok for $45. I use it daily! I render my own lard, beef tallow and chicken schmaltz so easily. You can just scrape the proteins along one side as the fat pools in the bottom and using a curved edge spatula, scoop up the fat and drop it into a canning jar. Thanks again for another great video.     About 30 years ago when my grandmother passed away I found one in her basement that she bought in the 30's and been there since the 50's. I soaked it in vinegar for a couple days then sandblasted it. Re seasoned it and use it today.

      Using fire is very bad for any cast iron overheating the pan ruins them, I cringed seeing that treasure in the wood stove

    I really don't know but I read recently that cast iron is great for women of child bearing age but not so much for men. I think you guys are wonderful cooks and probably know a lot more. It would be nice to hear a little more about your families and how often you communicate with them. I remember Eric mentioning that he had family from all over the world. I'm retired in NC so I won't be trying to do anything close to what you are doing but your channel is SO much better than anything else on TV. Please keep the adventures coming!

    Several years ago I took a leap of faith, got rid of all my ceramic/nonstick pans, (except the 1-qt pot I keep for candy making), and forced myself to only use my cast iron skillets. I have a 10" Lodge that was almost new, and a 12" pan I got at a yard sale that probably belonged to my elderly Aunt. With proper care they work great!

    My husband found a 20 inch in the trash also. I know people think that is gross but once cleaned and seasoned they last for ever. I also have some that are over 100 years old that have been handed down from the Generations. They are awesome to use. For people who have never used them you can get them too hot and burn food easy. I know i have done it LOL. Love your videos.

    I use the same pan to cook everything so I only dirty one pan. 😁 Saves a lot of time. Thx much for the teachings 😁 It really helps a lot of people.

    Been cooking on cast iron all my life (80) and have a pretty good collection. Favorites are Griswold and Wagner. I clean old crusted yard sale pans by soaking them in lye for a week or more. When they come out of the soak, the pans look factory new. Quickly need oiling to prevent rust. I like to start curing skillets by low cooking a whole pound of bacon. Remove the bacon, leave a small amount of oil and place in oven at 250 or so for 3 to five hours. I prefer using peanut oil thereafter to re grease pans after drying.

    Great video guys. Just a tip, be very very careful when using a metal scrubber on a cast iron pan, even when stripping the seasoning. It can leave scratches in the cast iron since it is a lot softer than the metal scrubber. That being said, if it works for you, then go with it :). I use my self clean feature of my oven to do the removal, like your woodstove. Great stuff.

    I have a 10 inch skillet that was my mother's and she got it as a newlywed, so it's at least 75 years old. I also have a 5-inch and an 8-inch that I got from my grandmother -- so handy for little jobs -- they are easily 100 years old. And finally, I purchased an old Made in USA (no idea what brand) 10-inch at a garage sale for $5 that we use camping -- it's probably the best of the bunch. (And we have two dutch ovens.) Cast iron is the best!

    Mmmm, both the meals you cooked looked soooo good! Once you've used those two "new" pans regularly to get them nicely seasoned, it will be awesome to have two great pans back out at the cabin so you don't have to transport heavy pans back and forth all the time!     I cook all the meals for my family on cast iron and love it! I have a little tip for frying eggs so that they don't need to be flipped. Sprinkle a few drops of water on the eggs and cover with a lid to cook. They tops will cook from the steam, and you won't risk breaking a yolk. I made a big skillet of them this morning for the family!

    Thanks for this video guys. I have just come into posession of a very old dutch oven...and have a square griddle cast iron pan that cooks Boscoe pears, rubbed in marmalade, to a delectable colour and flavour. Now I know how to care for them. Our family never fried anything in a pan, that I ever saw in my life, so consequently, I never learned how to fry an egg in a pan, would you believe? Today I found 2 videos...3 mins long...how to fry and egg, so it slips out of the pan...and how to cook perfect crunchy bacon that stays straight...yup, we never did bacon in a pan either. But...we had a beautiful cast iron wood stove that I now know, was seasoned very well...Dad would rub it down a certain way, load it with various types of wood, for different foods...and just plonk the meat, steak, sausages, lamb chops, fish etc on top of the stove. Nothing ever burnt and it was the best taste ever...and the stove top was always shiny, like these pans Erik did in the video today. Thanks again...for jogging my memories long forgotten.

    There are lots of videos on cleaning cast iron. If you have rust or a dirty pan you can use course salt also. Your video encouraged me to learn more. Thanks!
