Canning Bourbon BBQ Sauce ~ Sweet Spicy Smokey BBQ Sauce ~ Water Bath or Steam Canning

    Stock your pantry with this delicious and easy BBQ sauce. So easy and so good!
    8 c. good quality ketchup
    2 1/2 c. firmly packed brown sugar
    3 T. garlic powder (do not use fresh garlic)
    3 T. onion powder or 6 T. minced dried onion (do not use fresh onion)
    3 T. dried mustard
    2 t. smoked paprika
    2 ground red pepper
    1 t. chili powder
    1 T. pepper
    3 T. kosher or seasoned salt
    1 1/2 c. quality bourbon and 1/2 c. water OR 2 c. water
    1 1/4 c. apple cider vinegar
    3/4 c. apple cider
    2 1/2 T. Worcestershire sauce
    2 T. lemon juice
    1 T. siracha or other hot sauce
    1/4 c. prepared mustard
    2 T. liquid smoke
    1/3 c. molasses or honey
    Ladle hot sauce into a hot jar leaving 1/2” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    Definitely making this! I use that ketchup also. Received a bottle of Makers Mark for Christmas to make vanilla. Looks like that large bottle will come in handy for this recipe too! Thanks Carol!

    Carol, how timely! Bought some store-brand bbq sauce, which tastes like ketchup, no joke!, so am going to use that, with ketchup, to make this sauce. Thank you for all the work, effort, love, you send out to the universe. I hope it comes back to you twofold.

    I know that ball no longer recommends simmering your lids, and you stated not to do this because they won't seal well.... but, I still bring a small pot of water to a boil, turn the heat off and drop my lids in. I actually found that NOT heating them at all caused far more seal failures than preheating them. Have you or anyone else found this to be true?

      I’ve only had 1 batch failure and that was when I simmered the lids. I wash them in hot water, rinse and set aside. I’ve not had a failure since

    Looks Yummy!! Will definitely have to try it. I have a question about tested recipes. I have several vintage books on canning, a Better Homes and Gardens book from 96 and even older ones from the 60’s. Would the recipes contained in those books be considered “tested” ?

      It’s hard to say but probably not. I’m sorry I don’t have a better answer. If there’s a recipe you want to try I would look for one similar in a Ball Canning book or National Center for home food preservation 😊

      Marilyn, I get my liquid smoke in my grocery store. It is with the A-1 steak sauce area. Amazon also sells this. Hope this helps. ☺️

      I’m not sure about using apple butter. I’ve never come across a canning bbq sauce recipe that includes it 😊

You mentioned that you could use apple butter. So I was assuming that the apple bourbon sauce you made could be canned. Not to can, just for making and using? I bought the apple butter and then saw this video, why I asked about the apple butter. Thanks for setting me straight. 💕

    does the alcohol cook off in the sauce during canning? i know it doesn't when simmering but wondering if the higher temp would help eliminate the alcohol in the bourbon.

    It looks like, your recipe makes more than 7 pints. Because there were some sauce still left in your original sauce pot. How many pints were you able to get?

      In water bath or steam canning you really should follow a tested recipe. The correct acidity is important for safety. 😊
