Traditional Butter Cake Recipe with SCS Butter and availability at The Hainan Story

- Chinese New Year is just around the corner and one of the things I look forward to is the traditional butter cake!
This cake is baked with one whole block of SCS butter (bit.ly/LazSCSButter) and results in that nostalgic flavour that I grew up with. SCS has been a household brand since 1905 and its quality is recognized by both home and professional bakers. What makes SCS different is that the cream is double churned to give it that velvety texture.
I've been working with the bakers from The Hainan Story to reproduce this cake according to my recipe so you can now pick up a traditional butter cake at any of The Hainan Story outlets! (until 15 April 2024) It is as close as you can get to actually baking it yourself at home!

dr leslie…i bought 1 and i finish everything. it is the best. period. can u help us to make this a permanent product..otherwise i won’t be able to enjoy such delicious fragrant buttery fragrant butter cake. i cried when i ate it it just so good and light. the price point is reasonable given the quality. love love love it

Leslie, I admire your food-related passion. I’m 77years young, an ex-Singaporean and like yourself, my food-related passion is still strong. May I ask where you purchased the cloth strips. I’ve made some myself and use them frequently, however I dampen the strips beforehand.
I bought them at Redman Toa Payoh which has a special section for Wiltshire products

I'm afraid it wont work with plain yoghurt. You may omit the sour cream but your cake won't be as moist.
Can cream of tartar be omitted? If not, what can it be substitute with?
Yes it can be omitted. It is just extra insurance for stable egg whites

Yes, the butter was a bit too cold, but the cake turned out ok

Yes didn't add baking powder because self-raising flour was used. You may add 1 tsp of baking powder to your plain or cake flour if you prefer. But I prefer cake flour as it gives a softer texture.
