  • Make these Jade Snowskin Mooncakes for the coming Mid Autumn Festival. I added some matcha powder to the outer skin while inner filing is homamade pandan lotus paste. Thus, my jade snowskin mooncakes are jade-green from the inside out. The skin is very much like Japanese mochi but it's softer and less chewy. It really pairs well with pandan lotus paste.
    很喜欢这组带有中国风的翡翠冰皮月饼。外皮用抹茶粉调色,内馅则是用斑斓莲蓉馅,所以月饼从外皮到内馅都是翡翠色的。皮软糯,搭配有斑斓香的馅,小小一个,做得开心,吃的也很开心。
    Ingredients:
    1)Glutinous Rice Flour - 50g
    2)Rice Flour - 50g
    3)Wheat Starch - 30g
    4)Milk - 235g
    5)Sugar - 20g
    6)Cooking Oil - 30g
    7)Mizuame - 20g
    8)Matcha Powder
    9)Cooked Flour
    10)Pandan Lotus Paste - 400g (25g X 16pcs)
    *How to make Cooked Flour: Stir fry 2 tbsp of glutinous rice flour in a non stick pan, low heat and without oil. The flour is cooked when it becomes light, slightly yellowish and doesn’t taste raw.

    材料:
    1)糯米粉 - 50g
    2)粘米粉 - 50g
    3)澄粉 - 30g
    4)鲜奶 - 235g
    5)白糖 - 20g
    6)食用油 - 30g
    7)水麦芽 - 20g
    8)抹茶粉
    9)熟粉/糕粉
    10)斑斓莲蓉馅 - 400g (25g X 16pcs)
    熟粉/糕粉的做法:把2汤匙的糯米粉放入不粘锅,小火,干炒直糯米粉变轻,颜色有点黄,吃起来没有生粉的味道就可以了。

    Hello! Thank you for this recipe! Can the snowskin be steamed instead of microwaved? If so, for how long would it be steamed? Also, thank you for your other creations. They are all really inspiring! :)

      澄粉也叫澄麵,小麥澱粉和汀粉,常用來做蝦餃。它可以讓冰皮帶有點晶瑩剔透的感覺。
      找不到就用等量的低筋麵粉,口感和剔透感會不同,但可以試一試。

      I wouldn’t recommend maltose because the color is darker and I’m also not sure if it can serve the same purpose as mizuame

      You can try to replace corn syrup or fructose instead

      可以用玉米糖浆corn syrup 或果糖fructose.

      要省略也可以,做法略不同。粉类和湿的材料分别拌均匀,然后在一起搅拌。过筛一两遍后才蒸/微波
