Pretty good Jimmy. Two things: 1. Always fry your sauce before using in any way. It changes flavor profile of chiles. 2. Queso fresco is not a good melting cheese. Good for enchiladas filling though, like you used it. Use a Oaxaca cheese for topping if you want it to melt. And yes, crumble the fresco with your hands, just like you figured it out.
The technique of bathing the tortilla in enchilada sauce and then shallow frying it is a spot on Mexican technique. The oil heating the tortilla and sauce softens the tortilla and adds a level of caramelization and umami! Good job. I am a Mexican who grew up eating delicious food. The only thing we did not do is place them in an oven after they came off the pan or griddle... but if it helps keeping them warm, I get it.
Wow, a non-latino making enchiladas the almost) proper way. Ingredients on point, technique a little off. Fry both sides of the tortilla, then take it out of the pan and on a plate on the side. Continue to dip and fry the remaining tortilla, stacking them after. Fill and roll each one after you’re done. They should still be warm, but not so hot you can’t handle them. Also, we usually add chopped cheese to the onions (never use a grater) when we use cheese as the filling. That’s it! You can add the cheese on top (if chicken is the filling). We don’t usually add sauce. Instead we top with cheese, sliced tomatoes, onions and some people also add chopped lettuce. Serve with a pickled jalapeño and sour cream on the side. Red enchiladas aren’t put in the oven, and never use canned sauce! Someone gave you the OG recipe. 👏🏼
I'm a mexican......and i have never been so proud. My abuela(grandmother) made the best enchiladas from scratch. She taught me all her recipes by memory and by teaching me when i would visit or spend the weekend with her. At age 11 i knew how to create all her dishes. Now that i'm 56, i taught my grandchildren as well. On a side note, i was dealing with the virus in March. It kicked my latina ass, and almost killed me. If not for those mexican recipes(caldo, and rice) and Vicks VapoRub my abuela swore cured everything, I doubt i would be writing this to you. I know u didn't ask for tips but may I suggest. Adding tomatoes to the mix then I know u used chicken broth but also u can use some Knor Suiza is chicken powder and let it seasoning. Then fry the tortilla by itself then dipp in the tortilla in the sauce then place the chicken. Inside also u can use queso panela or fresco use a fork to crumble the cheese and cut little slices of onion and mix it with the cheese if u like or separate.
