This is a seriously tasty looking recipe and in a straightforward easy to follow way. Big note though, the open window and extractor on full is very much needed and preferably use a portable butane burner and do the charcoal step outside because burning charcoal produces carbon monoxide which is extremely dangerous and its not detectable without a carbon monoxide smoke alarm as it has no taste, no smell and its not visible. Be careful.
I also don't have access to an outdoor grill, and therefore don't have charcoal. A few drops of "liquid smoke" from your local store does the trick and saves some time. Love the channel and your calming voice! Thank you for the recipes!
Actually I’ve tried it with liquid smoke but it is not as close to the smokey aroma that charcoal imparts. I bought a small bag of charcoal and stored it for these purposes only 😀. Thanks for all your support.

I made this but I think I did something wrong. It came out really dry and tough. Now the flavor and spices were spot on delicious. I ended up picking the chicken off the bones and making a soup out of it. I’ll have to try this again. I think maybe I left it under the broiler too long. I think I’ll try covering it with foil while baking and finish under broiler too long get that grilled effect. I love your recipes. Could you add the instructions along with the ingredients? I’m sure I must have made a mistake somewhere. Thanks for sharing.
I am sorry that it turned out to be dry and tough. Hope you did not add too much salt in your first marination. How long did you do your first and second marination? At the same time oven temperatures vary. Probably your oven gets too hot. Next time maybe bake on 375 F or use a foil for the first 30 mins and then remove foil and bake it. I keep it under broiler just for 3 to 4 mins, 5 mins max. I would say you do not need to keep it under broiler.

I think my oven might run hot too. I will make this again for sure. It’s something I’m doing wrong I’m sure. But like I said the flavor, now that is spot on delicious.
I only have access to induction stovetops and don't have a stove hood - I add smokey flavour by using smoked paprika instead of sweet paprika, and use black cardamom in the masala. Smoked sea salt is also a good option that's available commercially, it's just regular sea salt that has been cold-smoked so is totally natural.
Sorry about that. You can also cook this in a pan over stove top, turning it from time to time, but I think the oven does a better job. You can also skip the smoking part, just marinate it and roast in oven. Giving you all the options in case you would like to give it a try in an easy way.

For this recipe you need to score it for the marinade to seep in completely, only then the chicken will be flavorful
