    Amy, I am on my 2nd batch of your Country Loaf in less than 1 week! I have to say, this is my best to date! Flavor, scoring, crumb ... So good! I doubled it and gifted a loaf from my 1st batch and got this message back from my friend "Girl, that sourdough is THE best I've ever tasted"! So there you go!     Amy, Amy, Amy! I just used this exact recipe and technique and I am THRILLED with my results. Mouth watering, open crumb, super fresh, crispy crunchy crust!!! And it was so easy. You are so down to earth and calming through it all. This is only my second try at sour dough. This is now my "go to" recipe. Thank you so much. I just turned 60 just started baking bread coincidentally about a month before Covid started. I'm in South Eastern Ontario Canada.

    Folks I made this recipe yesterday and baked it in a Lodge cast irion Dutch oven.....man it was delicious. Me and my family nearly ate the whole loaf. I told my wife that I was going to be fighting the battle of the bulge 😂 this bread is absolutely heaven on earth. This is the Alfa and Omega of bread. My seven year old son said this bread is the bomb dad,you tha man . 😁 Looks like I will be baking again tomorrow. ...two loaves this time. I wish I had made pictures of it . It looked like and tasted like Tartine bakery bread . This will be a regular in my home from now on. Best bread I have ever made. Thanks again for the recipe and video.

    I decided to give sourdough baking another try after a little brake (It wasn't sourdough, it was me lol) finding Little spoon farm's recipes I what got me brave enough to give it another go and EVERY recipe I have followed firm Amy has been a total success! My husband (this is his account) couldn't be happier he actually said
    "Phew! You figured our how to make delicious sourdough! I was really not sure you were going to make great sourdough!"

    Hi pretty lady Amy! I'm soo excited I have the bread in the fridge proofing but I wanted to know what's the minimal amount of time it needs to proof in the fridge. In the video you say up to 12 hours on the recipe you say up to 36 but it doesn't mention the minimal amount to time! Thank you so much, I'm excited to see how this recipe turns out!

    Basic recipe, but the key is technique. Your light touch was helpful...I've been manhandling my dough and getting dense crumb. Tried your gentle approach and got a heavenly crumb.

    Amy I have the same cast iron dutch oven. It is easier if you put it upside down and slide the parchment onto it. You don't have to take the entire pot out of the oven.

    Hi Amy I made your country loaf and it is the best loaf I have mad so far. I also made the bagels they turned out great as well. I am a cancer survivor, stage 4 throat cancer 9 years ago , the radiation treatment did in my saliva glans so it was hard to find a bread I could eat at the store. I started making home made bread about 5 years ago I decided o try sourdough. I was a journey for sure your instruction so clear and simple help me to make a wonderful loaf yesterday thanks.

    I just finished making this recipe for the 3rd time. It is definitely a hit in my household, and my new favorite for sourdough. I tend to over complicate sourdough, and nerd out on the tiny details. This makes it simple but still wonderful looking and most importantly wonderful tasting. Perfect for these -15 Minnesota mornings. 🥶⛄️

    Hey Amy! I came across your channel while already in the middle of making my first starter. I found instructions from another channel but switched over to your method because it seemed to just make more sense for me. And then after it was active, I made 2 horrible flat loaves, using a different channel's recipe. For my third I decided to try your method and it was a success. So much oven spring! That was last week, and in fact, I started another one yesterday(to make sure it wasn't a fluke). I literally just took mine out of the oven like 30m ago. It looks even better than the last! The rise was so enormous! Just looking at how beautiful it was brought me so much joy and how grateful I am to you! Even if you don't read this comment, I hope mine, and other success stories on here, encourages others to try your recipe. It WORKS! Thank you so much Amy! You are an amazing and beautiful person :) So excited!

    I've followed your starter steps and made your beginner loaf a couple of times and am looking forward to this one next, but I see there are a couple of steps added to the schedule and hoo-wee, this is going to be a day-and-a-half commitment and not being lazy on the weekend! And just not going to happen during the week for this working guy. You might want to provide a suggested schedule along with the recipe pages, it would be helpful.

    I followed this recipe for my first sourdough bread a week ago (only researched how to bake it on a baking sheet as I don't have a Dutch oven yet) and it turned out amazing!     I autolysed mine by accident overnight for about 10 hours before adding the salt! The dough just seemed to love it! I carried on as normal and got some absolutely fantastic loaves.

      So Dafydd, in the morning you added the salt? I have forgotten to add salt to other recipes and sometimes it made a difference and sometimes it didn't for whatever reason.

    Hi Amy, I had many frustrating tries at sourdough until I came across this video and it really nailed all my issues and now I am a very happy camper. Many thanks for your sharing this. My biggest issue was catching my starter at the right time plus hydration level that was way too high for a beginner. Now I am confident with every loaf after understanding when precisely to catch my starter and your simpler steps. Once again, thank you.

    Made my first Sour Dough bread, came out better that I even imagined. Thought I over-proofed it. Had a few challenges, must get a marble slab. I thought I'd use parchment paper but it was pretty sticky. It still all worked out. I tossed my 1st batch of starter dough and made a new batch with bread flour. On about the 6th day, the yeast got very happy. It's definitely a learning process that takes time and patience, but sooooo worth it. Thanks for making these videos!!!

    I've been using your ...little bit more advanced ...sourdough and it has been absolutely brilliant each time. Here in the UK it has been difficult to find strong bread flour during Covid lockdown but even with ordinary plain flour the results have been amazing. For years I have been unable to eat bread as it gave me wild indigestion but sourdough doesn't. Love your videos

    I love everything homemade. I just started fermenting last year as a way to preserve some of my harvest from my garden and it’s crazy how much healthier I feel by eating those foods everyday. I made my first starter last year and it didn’t fare well so this past Monday I started again. I had a really hard time finding someone that explained how to care for it properly.     Hi Amy, first off I really like your channel, keep up the good work.
    I need some advice if you have the time. When I take the dough out of the banneton which has proved for 16+ hours in the fridge and let it rest on the counter for 30 mins as per your your recipe the dough just sinks and doesn’t retain it shape even though it’s proved and risen to the top of the banneton. Any idea where I’m going wrong?

    So thankful I found this. My very first loaf turned out just perfect. I purchased starter from my favorite local bakery. Then followed all of Amy's steps. Because of the pandemic, I ran out of bread flour so for my second loaf I used all purpose four. Again, a perfect loaf that had an even better texture. Nice and round with a beautiful ear. Thank you Amy.

    Hi Amy, I made this and it’s delicious!!! I didn’t have just sesame seeds so I substituted with a topping called everything bagel topping. It’s a combination of seeds that you find on everything bagels. DELICIOUS, thank you!!! ❤️

    I just finished making this recipe - turned out great! My only trouble was the Final Shaping. The dough was too sticky and it didn't come out of the proving basket properly. I ended up having scrape it out and quickly re-fold it before baking. Nevertheless, fantastic results!! Thanks for the instructions!!

    Thank you sooooo much! My grandkids ask for this all the time. We all love it. The only thing I see different is that your's look larger than my turns out. I use the cup measure. Next time I will use the weight measure to see if there is any difference.

    Amy, when you say prepare Starter, what temperature is your home? Our home is cold at night. What temperature do you recommend for a strong starter in 12 hours? 70's?

    Hi Amy, greetings from U.K. I’ve done your beginner’s recipe successfully a couple of times. Now about to try this one. Two questions: are the oven temperatures for fan-assisted or standard ovens? And shouldn’t the autolyse phase be without the starter at that point? I don’t doubt you at all, Amy, but it seems to me that adding the starter means it’s already feeding on the dough

    Thanks Amy, the best sourdough I've made so far, even though I added 30g too much water 😞 it still rose well and tastes fantastic. I'll try and do it right next time 😉

      I did the same thing, probably because I added the salt's water at the same time as the main mix. Oh well.

    Hi, I am curious; if you do not have a starter; can you just put Flour, Water, Salt in a bowl; and just let it naturally ferment for a couple of days or say; and then bake it. Will that work for an edible healthy sour dough bread; or do you need to have a starter? Thanks

    Amy Duska; What factors influence the 'crumb'; the size and amount of bubbles in the bread? .is sticky dough preferable to more soft dough? Thanks in advance. John
