    I’ve been cooking a long time and this is the best chicken breast I ever tasted. I promise that you’ll never cook another chicken breast, steak or pork chop using oil in the pan vs putting it on the meat after trying Christine’s method. Perfect every time!

    Hi Christine, I've been married 45 years this July, My wife's idea of a chicken dinner over the years has been chicken breast, salt and pepper and bake for 24 hours lol.
    I've had a big skillet hanging on the wall for years. IN SHORT I tried your chicken, it was GREAT!! My wife loved it, and thanks to you my wife asked me what's for dinner tomorrow night? Like it or not I just landed the honors of chief in my house .. So keep your recipes coming.

    I tried this today. Now, I’m not a great cook but I’m trying to learn. I always have issues with chicken, I always make it too dry. But I made this today and it was the juiciest and most delicious chicken I’ve ever made! Thank you for this recipe!
    P.S I’m also Greek!

      Why didn't she mix the ingredients together in a bowl and marinate the chicken before frying it? Adding ingredients over the pan may create uneven flavours

    Christen, I did it! Normally I would do in oven. It came out good. Took half hour which is fine. Cannot believe. First time cooking it in fry pan. Thank you. Ps it never made it to oven. Did not want to drag it out of pantry!

      On cooking topic: Thank you for your to-the-point instruction with clear video and sound.
      Off cooking topic:
      * Character who says "Daarling" is Edna Mode. Brad Bird's homage and take on "M" from James Bond films. I think Ms. Cushing does bear slight resemblance to Elastigirl. I've seen "The Incredibles" multiple times.
      * The other Greek celebrity she definitely bears strong resemblance to I won't repeat as I am sure Ms. Cushing is tired of hearing it . That Greek celebrity prior mentioned in this and about every other of her youtube posts.

    Wow. I just cooked this with some alterations. Skipped the mustard. Served it with pasta doused in the pan sauce and added a little white wine, parsley and garlic powder. Very devine and will make again. Was kind of like chicken piccatta but without the flour and capers.

    Christine, I used this technique for the first time this evening, and it was perfection! I didn't have rosemary, but used some lemon pepper & poultry seasoning, and the flavors were totally on point. Cleanup was so much easier without the tons of residual oil in the skillet! Will definitely add this to the permanent arsenal for the future.

    Pan roasting is a beautiful system providing you use either a gas or electric stove. I have started using an induction cooktop and the do not recommend to use an empty pan without oil. In fact I killed one of my beloved pans trying to pan roast with an empty pan. Christine I love your recipes.

    Wow..Christine !! YOur video is really knowledgable and very informative especially in why you rub the chicken meat with the oil instead of in the pan.... and you can also put some water in the pan to tell if it is sufficiently hot....thanks
