Today I'm going to show you how to make high protein pancakes.
These oatmeal protein pancakes are made with good-for-you ingredients, no protein powder and no banana.
You can eat these pancakes for breakfast, as pre-workout snack or even dinner, with your favorite healthy toppings.

They're so easy to make and reheat really well!
PROTEIN PANCAKES RECIPE
(makes 2 servings - 8 pancakes)
Ingredients:
1 cup skyr or Greek yogurt (255g)
3 egg whites or 2 whole eggs
1 tbsp maple syrup
1 tsp vanilla extract
3/4 cup ground oats, or oat flour (75g)
2 tbsp spelt flour
3 tbsp flaxseed meal
1 tbsp tapioca starch or cornstarch
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
For topping:
1 tbsp peanut butter
1 tbsp low-sugar fruit jam
NUTRITIONAL INFO (per serving):
500 calories, fat 17.3g, carb 53.7g, protein 36g
Preparation:
In a bowl whisk together skyr, eggs, maple syrup and vanilla.
Place the sift on top of your, and add the ground oats, spelt flour, flaxseed meal, cornstarch, baking powder, salt and cinnamon.
Sift the dry ingredients into the wet and gently fold in, just until incorporated. Set it on the side for 10 minutes.
Heat up a non-stick pan over low heat and brush with a little bit of coconut oil.
Spoon the batter into the pan (about 1/4 cup) and cook the pancakes for 2-4 minutes, then flip and cook for 2 more minutes.
Serve with peanut butter and fruit jam.
Enjoy!

Sasha you've done it again and although I don't eat breakfast this looks perfect for dessert tonight. I usually have sugar-free syrup on my pancakes and never would've thought of PB, but with jam it makes so much sense plus PB works with just about anyhting. Mind blown!

I also use sugar free syrup, but just a touch. I love rolling them. No toppings. After dinner. The protein, the flax seed. Hmmm.

How do you prepare the starter properly! Mine does not ferment very well. Help please!
@@vidyasampathkumar7113 Vidya, easy! Just take about 7tbsps of starter and make waffles with the rest.😁Add clean water and flour of equal weights, I just add 1 cup flour and one cup water and stir. Let sit in a worm room to bubble. You can always do this method when you feel your starter is weak. Have fun!🌷

If you live near an Aldi's, they have Skyr in individual yogurt sized containers. The one here does anyway and it's much cheaper than going to the main grocery store chains.

You can use whole wheat flour too.
If I want to use protein powder, what ratio should I use for this recipe and instead of which ingredients? (Oat and wheat flour?)
Not really sure, because I don't bake with protein powder, but I would give it a try with 1/4 cup protein powder and 1/2 cup oats.

Sure why not, and you can also use some silken tofu.

Yes, I believe you can find Skyr, but strained Greek yogurt will do the work too.

Hi Mitzi! You're right, something like that, the way of making is different, but the end result is similar, Skyr is little bit thicker... Anyway you can use strained Greek yogurt too.

What is Skyr ? yogurt ?
It's a type of soft cheese, very similar to Greek yogurt.
Is it high in calories? That amount of flax is 160 calories alone.

Skyr is icelandic yoghurt, there's not a real substitute for me but protein quark is probably the nearest thing

Hi there! Anyway if using Greek yogurt I suggest you give it a strain before adding to the mixture.
You have to watch out for cholesterol. You can try powdered egg whites if you want shelf stable ingredients or no yogurt. The powdered egg whites are great for people who want to avoid casseine or sugar substitutes like stevia etc found in protein powders. Bob's red mill makes the powdered egg whites, among other brands.

It's soft cheese, but basically it's a thick yogurt.

Beside the fact that it does contain too much ingredients for one meal (and that would be rather expensive ingredients,which makes this version great,but more like "once a month treat" or something like that), I would like to ask where did you get that Active Zone skyr...
We have to be realistic,at least here prices goes up almost every day,and they watching whats been bought mostly and not so"needed" (at least for the common crowd and regular little folks,not to mention everyday brainwashed pig who will eat and do whatever its been told to do) ,like bread or oil sugar and that kind of nonsense.
This things like good non fat cheese,protein stuff,pudings ,skyr,greek yougurt (if you can find any of that at the first place) etc.,are almost like gold. :)
They pumping prices non-stop,taking from everywhere it can be taken.
You should come up with similar,but budget friendly (so to speak) , tasty meal like these pancakes are.per se...:)

You're right, prices are getting higher each day, but I don't really find all that processed stuff you mentioned more affordable than let's say making these protein pancakes. Don't know about the prices in your country, but I got this double serving batch for about 2 euros, which is the price of 1 pizza slice in my local bakery. This Active Zone skyr, it's brand in our grocery store chain here in Croatia.
Sigh. I read your recipes and they are so happy wise and good looking. But. Big but. sasha, dear soul, I cannot eat dairy. Nor eggs. That removes upwards of 60% of your fantastic creativity from my list of meal options. Double sigh. Any chance you can throw in some hints/ recipes for us dairy / egg intolerants?

Actually if you'd change the word "breakfast" in the title for cheat-meal I wouldn't have a problem.I watched this video to check what a smart breakfast should be... this is anything but that
(1) There's no such thing as a healthy pancake.
(2) Wheat flour and sugars are among the worst things a human can eat.
(3) Flaxseed is toxic, and absolutely NOT a source of "healthy fats" or "healthy proteins".
(4) You removed the yolk, which is practically the only part of the egg you should actually eat, and almost the only source of vitamins, minerals and healthy fats you could've had with that breakfast.
This is basically a sugar bomb. You'll be hungry and back to snacking an hour and a half after eating this.
