- This chocolate cupcake is so moist, flavourful & delicious, you won’t even believe that it is VEGAN! This eggless cupcake is so easy to make and it’s a one bowl recipe ;). The frosting is super light, fluffy and chocolatey and it will definitely sooth any chocolate cravings you might have! This is a must try recipe!

RECIPE INGREDIENTS:
CUPCAKE:
1 + ½ cup plain flour
3 tablespoons cocoa powder
1 cup sugar
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon vinegar
1 teaspoon vanilla extract
5 tablespoons sunflower oil
1 cup water
FROSTING:
250gr/8.8oz soft unsalted soy butter
250gr/8.8oz icing sugar
4-6 tablespoons soy milk (to loosen mixture)
2-6 tablespoons cocoa powder (to taste - I used 6)

Wonderful! These do taste great - this is an old recipe from Depression era America, it’s called a Crazy Cake, due to the way the liquid is added to the three little holes 😁 . It wasn’t intended to be vegan - we just got lucky! Thought folks would like the history of the recipe. Thanks for the super little video 😊
I was looking for a quick chocolate cupcake recipe so I clicked on yours because it's only 2 min long so I knew there would be no unnecessary rambling. I checked the comments and thought: How good can these cupcakes be? It's the same ingredients as most recipes I have seen before.

Haven't tried the frosting but the cake is absolutely mind-blowing!!! It's so light, moist, and flavourful. Anyone saying vegan cake is blance should think twice. Thank you so much for this recipe
These are truly incredibly delicious! Just made them. My only adjustment for next time? Less sugar. Instead of using the organic white sugar I have, I used 1/2 cup of coconut sugar and 1/2 brown sugar. Next time, I might do 1/2 cup of coconut sugar and that's it. I also used oat milk instead of soy and they were amazing. Just wanted to say thank you for this super simple recipe. These were such a hit this evening after dinner! :)

Just made these! They turned out so amazing. No one would ever know they’re vegan. I made two recipes and it made 22 cupcakes! A little more than the recipe says but I’m fine with that🤣

I made these cupcakes and tripled the recipe. But it made much more than only 6 cupcakes per batch, so I ended up with about 30 cupcakes. Oops. Haha. Anyway, they were fabulous !! Thanks for the recipe !! I shared with friends and neighbors and everyone said they were delicious !!

Does it matter what type of vinegar is used? I usually have apple cider vinegar on hand. And could I sub sunflower oil for vegetable oil?
I used apple cider vinegar and canola oil for my cupcakes and they were still fabulous!
Is there another oil you can use besides Sunflower oil?

Hi Kate, almond milk should be just fine 😊. I won't suggest olive oil though, because it has a strong flavour, sunflower oil is flavorless and won't affect the taste in a negative way. Good luck 😘
DO NOT use olive oil. I made that mistake once. The flavour is too strong. Use vegetable oil, grape seed oil, canola oil etc instead.
Easy, tasty recipe. I got 12 cupcakes from this recipe! Also let the grand kids put on their own sprinkles. :)
Can you substitute the vinegar for lemon juice? It's also acid and activates the baking soda.
It will give a lemony flavour , the vinegar has no taste

Oh yea, an I added chocolate chips to the batter cause the vegan butter we have to use won't hold up long enough for frosting on the go.

Why use cocoa in stead of cacao? what is the difference?
cocoa is sweeter whereas cacao is more bitter, but use what you like

M Devi Yes, definitely! The baking time should be asjusted to the size of your pan, but just start at 25-30 minutes or so and keep checking if a skewer comes out clean 😊

+@@sherylcrowe3255 I've made many muffin recipes to cakes, and cake recepies to muffins. You might try twice to get the temperature and baking time right, but generally muffins are baked on higher temperature and a LOT shorter. Try the cake version and I'd check after 15 minutes and keep checking every 5 minutes or so to make sure it doesn't get dry. Just be creative! :-)
Vinegar in cupcakes sounds strange, however I'm going to give this recipe a try.

you have to halve this recipe to get 6cupcakes!!! that’s what I did and got exactly 6

Is it necessary to use sunflower oil; can we use oil available at our house???
And is it powdered sugar???
Its granulated sugar, and canola, vegetable, rapeseed and other neutral oils work fine. However I don't advise olive oil.

Granulated sugar is not vegan. I would use a different type of sugar and possibly try this out.
Madeline Grace it is if it’s organic. Also, some brands don’t use bone char. :) and in other countries like Australia and UK - they don’t use bone char
+@@Shirxoxo In my country all that sugar contains is, well sugar. And sugar crystels have nothing to do with animals. What weird stuff is in your sugar? And what is bone char?
Samir the Cat Bone char is exactly what it sounds like. It’s charred animal bones. So, in the US they break down and whiten cane sugar by filtering it through bone char. That’s how they get the sugar to be super fine and super white. It’s weird. Some companies use granular carbon instead though. And when it’s organic, they don’t use bone char. And they also don’t use bone char for beet sugar, only for cane sugar.

Okay, done. We probably only have beet sugar in Sweden. Never, ever heard of animal bones in sugar here, or it not being vegan. Do you live in the US? Weird food you have there, haha...
