Preserving Jalapenos...and making something really Salty & Spicy!

- Jalapenos work well for dehydrating - and I'm showing you something fun to make with it, too!
An alternative, if you don't have a dehydrator, is to pulse your fresh jalapenos into very small bits, mix it with the salt, and dry it on a cookie sheet in the oven.
Serve on popcorn, corn on the cob, spice up chicken salad, and any other way you want to spice up a dish!

We do a mixture of dried jalapeños and dried onions ….. keep each just dried, and powder as needed for seasoning …. We are in love lol

🤣🤣🤣 I loaded my dehydrator last week on a rainy day all closed in and wondered why I felt like I was coming down with a sinus issue~ went out to check mail and came back in and felt like 😐~~ I can’t believe I gassed myself with pepper fumes~ I KNOW BETTER I’m half Mexican for 30 yrs I’ve canned salsa but I’m still a newbie dehydrating ~ only 10 months in☮️💜
Yep - they can be harsh!
I love the idea of chopping/ grinding them before drying. I ground them after drying, and grinding dried peppers is also to be done outside. Note that hte heat is mostly in the seeds. If you have someone who loves stuff that is hot, leave and save as many seeds as you can! Hubby happily sprinkles the dried pepper powder on all sorts of foods.
Ok so here i go. I have 2 gallons of jalapeños. I have the confidence to dehy them after watching this. Thank you bunches Darcy.

I did a mix of jalepeno, serrano, and cilantro...it is so good.
Definatly take them outside when putting dehydrated peppers in the food processor. Found that out the hard way before I saw your video!!! Thank you for sharing.

You are so right about doing this outside. I did cayenne peppers inside the first time. I ran a quick errand. All I can say is all the pets were at the other end of the house. It took a long while one with all the windows open to make it breathable in there.

I’m sure I must have heard it before, but I forgot and processed my hot banana peppers in the kitchen. And it’s true about the gloves and the mask! I coughed from my toes to the top of my head! And my hands burned for a couple of days. I’m betting I’ll remember the next time! I think I’ll make some salt for my grandkids who love everything hot. Thanks, Darcie, for another great video!❤

yes - all peppers can be dried this way
Hey Darcy! This video came at the perfect time. A friend of mine is giving me some jalapeño peppers. Someone had gifted her a five gallon bucket. She said they are already in the freezer. Do you know if they will still dehydrate ok?
Sure are!
I grind my fresh herbs, etc. together with kosher salt in my food processor until well combined, then lay out on sheets in the DH until dry. After that, I process it again to however coarse or fine I want the salt to be. I leave it a little coarser if I'm going to be using it as a finishing salt or garnish.
Yep - I have that in the description box - but that works better with herbs than it does with more dense vegetables.

They don't work as well, but yes.
After dehydration can these be put in a vacuum seal bag?
sure.
I have thrown a bunch of bags of my jalapeños into the freezer for temporary storage. Do I defrost them before preparing to dehydrate? Or just cut them frozen and then dehydrate? I know they will take longer due to being wet from the freezer.
If you can cut them, just cut them from frozen and go for it.

Sorry to change the subject.....can I dehydrate the chopped ginger I used to make a tincture??? Seems a shame to just throw them in the compost..still have flavor.
Throwing anything into the compost is not a waste or a shame - it's feeding the plants/animals that feed you. But yes, you can.
My garden died with 110 degree heat snd drought ! Bug I will keep trying!
Same - that's why I have to rely on grocery stores for backup!
@ThePurposefulPantry....can thus be done in the wide open spaces? Gazebo? Or does it need to be an enclosed space outside? I know there is no way I can do them inside!! I have 2 gal. What is the drying time outside. It's rainy today so maybe tomorrow this is Sunday the 17th of Sept. Thank you so much!!
Outside = not in your kitchen :D Do them wherever you can.

Maybe do it in your garage with the garage door cracked, on on your back porch? She’s cautioning y’all to dehydrate them outside your home so the pepper fumes won’t irritate your eyes, nose, throat and lungs. If you do this outside the fumes will dissipate much easier and won’t irritate you as easily. Wear gloves though.

Would vacuum sealing help preserve these for years to come if doing a really huge batch?
Optimally, dehydrated foods are good for 2 years. Your mileage will vary ;) You may get more, you may not.

Do jalapenos retain the potency after dehydrating into a powder ???? (especially when using them powdered with cooking oils )
As fresh? no, but it's still potent.
