I buy the blocks of Parmesan and shred it on my microplane. It comes out light and airy like snow. Then I dehydrate it. It is the best method I have found so far. It lasts a VERY long time (I use tea towels when I dehydrate it so most of the oil is taken out) Then I can use it like you use that junk you get in the green can at the store with zero additives in it.
Darcy you have taught me so much on dehydrating, I greatly appreciate all the details that you've covered to help all of us. I too am freeze drying a great deal of items as well. I love having the extended preservation time, especially when I get a great deal on a quantity of things that we won't be able to consume in a year.

I would love to have a freeze dryer but that's way in my future if ever and so I appreciate you doing both methods and showing us how to use them. You've also given me a great idea with the mushroom parmesan seasoning because my daughter adores mushrooms and she knows that a big container of dehydrated mushrooms are coming her way this will be a good present too! Darcy, gotta thank you! I have been dehydrating a ton of stuff using my Excalibur. Got it several years ago. Had eight pounds of strawberries going when I went in the kitchen and the sound was off. So I went into the room where it was and it sounds like the fan is making a noise. So bummer!! So I decided I’d get a new one. But then I remember you talking about how you love the Cosori. So I got that. It arrived yesterday. I set it for the 30 minute timeframe before use and then I started using it. It is so quiet!!! Wow. And it doesn’t heat the room up like the Excalibur. I was really disappointed when I saw the size of it but I knew it would be smaller. And I did buy mesh sheets I will cut down and use. It came with a mesh sheet but it doesn’t go from edge to edge. However tops of everything is it is stainless steel!!!
I am enjoying your book. I have been dehydrating since the 70's and still learned many new things. I had to replace my dehydrator recently. It lasted over 40 years under heavy use during garden season. I am be 106 if this one lasts that long. Please excuse my 'dry' sense of humor. Love your channel!

Darcy you always bring it out for us ,I’m glad to see you haven’t deserted the dehydrator as I cannot afford a freeze dryer in Canada they are a horrible price hopefully one day they will come down in price
Yep - I'm not giving up on DH'ng!! But there may be times in the future when I do specific freeze drying videos because you can't also dehydrate that product, or I don't have enough to do both, etc.

Hi Darcy! Im so glad you showed preserving cheese several ways! My question is, if I shred my cheese from a block of parm, can it be put directly on the freeze dryer trays, or do I need a tray liner? Thanks in advance! ❤
Just like I showed in the video, no liner necessary. Parm is pretty dry and shouldn't stick even freshly shredded. I did pre-freeze cheddar before freeze-drying, though, to help it not stick to the trays. But I can't remember if I decided to use liners on it or not..it's been a little while.
Question - would putting a piece of parchment under the paper towels hurt anything?? The reason i ask is ive got plastic trays and are im afraid of having trouble getting that slime completely off them. Thank you so much for your blends too! I have 4 bags in my fridge right now! Lol 😊🙏🏻🙏🏻🙏🏻
You saw I put mesh under...it's fine. But it's going to soak up the fat even more than my fruit leather sheet did and likely spread under. Your best bet is to replace the paper towel often, too.
If I dehydrate butternut squash and make powder, will it rehydrate suitable for a side vegetable dish? Or, should I dehydrate in cubes or slices. What I don't want is a powder I can only use for soup or pies. Thanks in advance for your answer.
It will rehydrate into mashed butternut squash or you can add liquid more to make it a soup. If you want to do it in small cubes or dices, that's fine too
And if you listened to how I talked about in this - parmesan is fine...cheddar not so much. And you saw the pitfalls of doing it in this. Cheddar isn't worth doing to me because the oil issue is so much worse. Hard cheeses are easier...softer cheeses not so much.
So did you miss the whole part of me saying I was giving both dehydrating and freeze drying instructions and you just needed to use the time stamps along the bottom of the video box to get to the part that works for you?

In fact, I live in a very small one room apartment, where I do not even have a stove, so many options available to most are not options for me - but thank you so very much for your kindness!!!

But they are not airtight.

I use the green lids on my half pint jars for my seasoning I keep by the stove. So handy

I wouldn't want to lose the fat in the paper towels. Lot of flavor in the fat. Why not just freeze it?
