Depends if its a carryout, our trackers let the customer know when it's done for them to pick it up. Delivery orders are up there for a max of 10 minutes.
The prepped pizzas after about 30 minutes on the slider racks the dough can start to stick to the screens if not used by then. The sauce ladle the key is to use no force and rest the arm. Go in a circle middle outward. That gives smooth coverage so one bite is not dry and another bite too saucy. When you slap out dough balls a way too know if doing correctly is to hold the dough up to the light above you. If you see a bunch of light shining through it's too thin. You should see the edge crust the darkest and then rest of the dough a little light coming through. If it is too thin in the middle the grease pools when cooked and the dough can also stick to the screen. All the ingredients fall off when you lift a slice also. If it's too greasy in the middle you used to could take a power towel and absorb up the middle. Also if it's too greasy like that can give the customer heartburn from being too oily and also ruin their clothes. Back when we made pizzas it used to be an art form. Today it's mass commercial slam it out for low price. The specials Dominos sells for today are almost ( no joke ) the same as decades ago in price. Very little has changed. In booming economic times very little coupons are given. In slow economy times more coupons are given to retain market share and make it up on volume with lower profit per pie. Pizza hardly make any profit. It's the appetizers, desserts, and drinks that make the money. Have fun.

We cannot pat pizzas dry. The cheese was different than usual that day, not sure why.
